10 Reasons Women Should Lift Weights!

I have done so many different types of workouts: cardio, dance cardio, running, kickboxing, yoga, etc…but nothing has ever given me the kind of results that lifting weights has! When I added strength training…I FINALLY saw the kinds of changes in my body that I had always wanted!

So I stick with what works, while including some of my other favorite workouts too, of course! I just make sure to lift weights at least 3 times each week. The heavier I lift, the better results I get! I used to be afraid I’d get ‘bulky’, but I was uninformed. The truth is, lifting weights made me leaner and stronger than I had ever been!

If you’re still not convinced that you need to lift weights, here are 10 reasons you should reconsider.

1. Burn more fat. It has been scientifically proven that lifting weights keeps your metabolism elevated for several hours after exercise.

2. Change your body shape. You will NOT get bulky! Women lack the body composition and hormones for that! Keep your nutrition clean, and you get leaner and toner and skinny jeans readier!

3. Boost your metabolism. As we get older, we begin to lose muscle tissue, bummer right! If you diet alone, you will lose muscle even faster! Lifting weights will help you build muscle tissue, thus elevating your metabolism, thus burning more calories all day long!

4. Get stronger and more confident. Strength training will make you better at every day activities too, like lifting kids, bags and bags of groceries, etc…And being stronger will make you feel confident and bad ass! (true story!)

5. Build strong bones. Women MUST lift weights to avoid bone loss! When you lift weights you improve your muscle strength and bone density at the same time! Say NO to hunched over brittle bones!

6. Fight depression. Endorphins are endorphins! Yoga, running, weights…it all makes you feel pretty damn good!

7. Improve sports fitness. Biking, hiking, skiing, whatever strikes your fancy! You’ll be better, stronger and faster!

8. Reduce injuries and arthritis. Your joints, ligaments and tendons will be more flexible and stable. This will help you stay safe! And even those who already arthritis see improved movement and strength with weight training. And less pain too!

9. Get heart healthy. Pumping iron, gets your heart pumping too! A pumping heart, is a strong heart.

10. Defend against diabetes. The more lean muscle mass your body has, the more efficient it is at removing glucose from the bloodstream when can reduce diabetes symptoms and prevent type 2 all together!

So now that you have 10 reasons…you just need a plan!

When I was first starting out, I didn’t have a clue what to lift, how many times, which days per week, etc…I would aimlessly wander around the gym just looking for things to pick up and put down. Not very effective. When I started P90X it was a relief to have a program that someone else had designed with a purpose in mind. It really takes all of the guesswork out of it for me! I’ve got enough to think about, I don’t have the time to figure out a weight-lifting program, too!

And since I got such great results with P90X, I was hooked on the at-home format. I cancelled my gym membership! Next I moved on to Chalean Extreme, Les Mills Pump, Body Beast, and now I cannot wait to start my next program!!!

Skinny Mexican Summer Squash Casserole

Some of my best recipes come from a last minute scan of my kitchen to find some ingredients that might come together and make something edible! Last night was one of those occasions. I had originally planned something entirely different, but had to change plans last minute. I had 1 hour to plan and prepare a meal the whole family would eat (or at least most of them!). 😉

I recently acquired LOTS of summer squash from our farm share, and I was hoping to incorporate at least a couple of them! That was my starting point. Anything “Mexican” is always a big hit at my house, so that was next. Next came some protein, and flavorful additions and boom! This was really very simple to make, and it came together quite quickly. OH! And it’s 21 Day Fix friendly! So there you go!

Mexican Summer Squash Casserole

  • 1-1.25 pounds of lean ground turkey
  • 2-3 medium summer squash (sliced) – I used yellow squash and zucchini
  • 1 can black beans (rinsed and drained)
  • 1 can diced tomatoes (drained)
  • 1/2 medium onion (chopped)
  • 2-3 garlic cloves (minced)
  • 1 T. olive oil
  • 1 T. chili powder
  • 1 t. cumin
  • 1 t. paprika
  • 1 t. oregano
  • 1/4 t. chipotle chili powder
  • salt and pepper to taste
  • 1 cup shredded colby jack (whatever variety you like)

Directions

Preheat oven to 400°. Spray a 9×13 inch pan and set aside. In a large skillet, add olive oil and saute the onion and garlic until translucent. Add the ground turkey and cook until brown and done. (Drain if necessary) Remove from pan and set aside. Add squash, beans, and tomatoes, and cook over medium-low for about 5-6 minutes until the squash is just tender. Put meat back into the pan and add the chili power, cumin, paprika, oregano, chipotle chili powder, salt and pepper. Stir everything together over low heat until incorporated and heated through. Pour into the 9×13 inch pan and top with shredded cheese. Bake for approximately 15 minutes – until cheese is bubbly. Let cool for another 15 minutes before cutting into it.

Serves 8: 208 calories/21 g. protein/13 g. carb/4 g. fat – per serving

Ultimate Chopped Salad with Creamy Avocado Pesto Ranch Dressing

What do you do on Saturday afternoon when you have a thousand things to do and yet another vacation to start packing for…COME UP WITH A NEW RECIPE OF COURSE!

I was craving a salad…go figure…and I had all the fixins for this amazing chopped salad! The dressing is totally amazing! It is seriously bowl-licking good!!!

You could really interchange the veggies, based on personal preferences and what you have on-hand!

The amounts I used here served 2-3 people.

I used:chop_salad4

  • 1 romaine lettuce head
  • 4-6 Roma tomatoes (from our CSA)
  • red onions to taste (from our CSA)
  • 1 yellow pepper
  • 1 English cucumber
  • 1/2 avocado

Directions: Chop all of the veggies into small, bite-sized pieces. In my opinion, that is what makes a good chopped salad! Place all of the veggies into a big bowl

For the dressing (should be MORE than you need):chop_salad2

  • 1/2 avocado
  • 1/4 c. Greek yogurt
  • 1 garlic clove – chopped/minced (I used garlic scapes from our CSA.)
  • 1 T. white balsamic vinegar
  • Juice from 1/2-1 lemon (depending on size and taste)
  • 1/2 cup basil leaves (or just a nice bunch!)
  • 1/4 c. olive oil
  • salt & pepper to taste

chop_salad1Directions: Place everything except the oil into a blender or food processor and pulse until it starts to come together. Then blend, while slowly drizzling the olive oil into the mix (may use less or more depending on taste and desired consistency). Add by spoonfuls into the veggie bowl and gently toss together until everything is lightly coated with dressing. Reserve the rest for later!

*Optional Extras: add some chopped grilled chicken, feta cheese, nuts, beans, etc…you can’t make a mistake with this!

Grilled Marinated Chicken Kebabs

First of all…you don’t have to ‘kebab’ this chicken if you don’t want to. You can just marinate it and grill it up…cause it’s really about the marinade! You could slather it on a shoe and it would still be pretty tasty!

But for the purposes of this recipe, let’s assume you’ll be grilling chicken (not shoes).

Ingredients

1/4 cup cider vinegar
1/4 cup extra virgin olive oil
3 tablespoons Dijon mustard
3 cloves garlic, minced
1 lime, juiced
1/2 lemon, juiced
1/4 honey
1 teaspoon kosher salt
ground black pepper to taste
This marinade is enough for about 5-6 skinless, boneless chicken breast halves.

Instructions

  1. Whisk all of the ingredients together.
  2. Cut up chicken (if making kebabs) into 1 inch chunks.
  3. Put the chicken in a large Ziploc bag and add marinade.
  4. Put the chicken in the fridge and try to marinate for at least 2 hours (less if you’re in a hurry and didn’t plan ahead).
  5. Place 5-6 pieces of chicken on each kebab stick (I pre-soaked mine so they wouldn’t burn).
  6. *Optional – feel free to add some veggies to your kebabs (mushrooms, peppers, onion, tomato…)
  7. Grill chicken over med/high heat and cook until juices run clear. (kebabs will take about 5-7 minutes on each side.

Then, when they were done grilling, I took the pieces off the stick, and shoved them into my 21 Day Fix container to see how many would fit! I was able to fit almost 2 full sticks in one red container – which was a lot of food!

This was my quick and easy lunch today, so I thought I’d share the delicious, happy love!

To start, I had leftover rotisserie chicken, and 1 Ezekiel tortilla. I scratched my head for a bit and remembered it was Friday. Friday means pizza, at least it does in my book! Then I saw the BBQ sauce and that’s what sealed the deal!

I whipped out my 21 Day Fix containers and 5 minutes later I was eating this delicious treat!

Anyway…on to the recipe! This was SO delicious…I think it’ll become part of my rotation!

So here is what I did:

21 Day Fix-Approved BBQ Chicken Pizza

Ingredients:

  • 1 Ezekiel (or whole grain) tortilla
  • 1 orange container of bbq sauce (use natural or make your own! see below)
  • 1 blue container of shredded mozzarella cheese
  • 1 red container of shredded chicken
  • *optional – a purple (or half a purple) container of fresh pineapple would be amazing!

Directions:

I spray my tortilla with a little olive oil and pop into the toaster oven for 2-3 minutes. Meanwhile, mix the chicken and bbq sauce together. Place on top of pre-warmed/toasted tortilla. Top with shredded cheese. Bake in oven (or toaster oven) for about 5 more minutes until the cheese is all melty and scrumptious-looking!

Take it out and enjoy!

*Clean-eating/21 Day Fix-Approved BBQ sauce

  • 1/4 c tomato paste
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp maple syrup (or raw honey)
  • 2 tsp coconut aminos or low-sodium soy sauce
  • 1 clove garlic, pressed or minced
  • 1 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 2 tsp extra virgin olive oil

Directions:

Pour 1/2 c water into a small saucepan. Add all of ingredients except the olive oil and whisk together. Bring the sauce to a boil and continue boiling for 3 to 4 minutes. Remove from heat and slowly stir in the olive oil.

* This recipe will equal about 2 orange containers. Use half for the pizza and save some for later!

On a Quest for Good Protein Bars?

I’ve been thinking about trying out one of the bazillion recipes out there for copycat Quest bars, and in the end…wouldn’t you know it…I kinda did my own thang!

But the results were pretty darn tasty if I do say so myself!

I actually made 2 batches: one chocolate chip cookie dough, and one chocolate brownie batter!

And I’ll show you how I did it, so that you can try it, and/or change it to your tastes, TOO!

Here’s what you’ll need:

  • 4 scoops of your favorite vanilla protein powder (about 1/3 cup a scoop) – I used Beachbody whey.  (I’m thinking you could use Shakeology for these too! For some extra nutrients!)
  • ¼ cup natural nut or seed butter of choice (smooth, not crunchy) – I used peanut for this batch.
  • 1/3 (I used Stevia, less if you like – feel free to sub honey, agave, etc…adjust water accordingly)
  • 2-5 tbsp. water (add 1 T. at a time, add more or less as needed)
  • ¼ cup oat flour
  • optional extras: I added 1/3 cup mini chocolate chips for my chocolate chip cookie dough batch, and 2 T. cocoa powder for my brownie batter batch. Experiment adding other fun ingredients like cinnamon, vanilla, dried fruit, etc…

Directions

  • In a large bowl, combine the protein powder, oat flour, nut butter and sweetener together. Add quest5water 1 Tablespoon at a time – If using Stevia (dry sweetener) you’ll need more water than if using honey or agave.
  • Stir together – get your hand in there to smoosh it all together until you can form a ball with no little bits coming out.
  • Scoop out the dough onto a piece of wax paper and shape into a rectangle.
  • Cut into 5 bars and refrigerate for 30-40 minutes until firm.
  • ENJOY!

April Fools Day Dinner Fake-Out!

I’ve already been sprayed in the face twice at my kitchen sink and there are booby-traps all over my house. And it’s all my fault! I’ve pulled some good pranks on my kids over the years! Once, when my husband was traveling for work, I made an entire ‘fake Daddy’ and propped him up at the kitchen table, holding a newspaper. When the kids ran around to hug him, they stopped dead in their tracks! Daddy’s head was made of newspaper! BAHAHAHA! There have been frozen bowls of cereal, taped up computer mice, and lots of other hijinks! And now they think it’s pretty fun to ‘get me’!

Well….it’s payback time!

I’ve actually done this one with my kids before, and it’s always good for a laugh! 🙂

Kids: “Mom, what’s for dinner?”

Mom: “Cupcakes and french fries!”

Kids: “Mom has lost her marbles…AGAIN!”

“Cupcakes” (Individual Turkey Meatloafs)

INGREDIENTS

  • 1 pound 93%-lean ground turkey
  • 1 medium zucchini, shredded
  • 1 cup finely chopped onion
  • 1 cup finely chopped red bell pepper
  • 1/3 cup uncooked old-fashioned oats
  • 1 large egg, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon salt
  • 1/4 cup barbecue sauce or ketchup w/honey (optional)

DIRECTIONS

  1. Preheat oven to 400°F. Generously spray a nonstick muffin pan with cooking spray.
  2. Gently mix turkey, zucchini, onion, bell pepper, oatmeal, egg, Worcestershire, mustard, pepper and salt in a large bowl, preferably with your hands, without overworking. Equally divide the mixture among the muffin cups. Spread barbecue sauce or ketchup w/honey on top of each loaf, if using.
  3. Bake until the meatloaves are cooked through or an instant-read thermometer inserted into the center registers 165 degrees F, about 25 minutes. Let the loaves stand in the pan for 5 minutes before serving.

 

“Frosting” (Mashed Cauliflower)

INGREDIENTS

  • 1 medium head cauliflower, cut into florets
  • 1/4 cup skim or reduced fat milk, unsweetened nondairy milk, or 1/4 cup of the cooking liquid
  • 1 tablespoon extra virgin olive oil
  • 2 cloves minced garlic
  • 1/2 teaspoon salt
  • Freshly ground black pepper, to taste

DIRECTIONS

Boil a large pot of salted water. Add cauliflower and cook until very tender, about 10 minutes. Drain.

Meanwhile, in a separate saute pan, warm olive oil over medium-low heat, add garlic and saute for about 30 seconds, or until the garlic is golden and fragrant. Remove from the heat.

Mash with a potato masher in a large bowl. For a smoother mashed cauliflower, use an immersion or hand blender to puree, or puree it in the food processor. While mixing, slowly add in the milk until the desired consistency is achieved. Mix in the salt and pepper and the minced garlic with the olive oil. Serve.

Mashed cauliflower can be topped with chopped scallions if desired.

*Use a little food coloring if desired!

“French Fries” (Cinnamon Apples)

Simply cut up a couple of apples. Use a fancy slicer if you have one! Toss with a dash of cinnamon and serve with a side of strawberry or raspberry preserves!

To be OK with the body you have…

ARE YOU COMFORTABLE IN YOUR OWN SKIN?

This is unbelievably HARD for me to post, but it’s like peeling off a band-aid before summer, and swimsuit season. I know everyone has their ‘thing’, and this is mine.

This is the thing that makes me cringe, and avoid the mirror. I’ve been working really hard to get past feeling insecure and self-conscious, and this is part of that process for me!

*I cannot believe I’m posting this on the world wide internets!

3 years ago I wouldn’t have DREAMED of wearing a bikini to the pool or the beach…NO WAY! Not with this “thing” on my belly. (Kids refer to it as a “butt” and giggle. I pretend it doesn’t bother me, but it does.)

I’ve spent the last 2 1/2 years working on ME. Getting fit, and making my health a priority has not only changed my body physically, but for the first time I’ve started feeling more comfortable in my own skin! My confidence and self esteem have improved drastically! So, even though it’s NOT easy…I WILL wear my bikini this summer – not to ‘flaunt’ anything, but to practice being OK with my whole self!

This scar is my badge of honor, for bringing 4 wonderful people into this world. It’s just part of who I am now. I continue working hard EVERY day to be OK with the body I have: every wrinkle, stretch mark, scar and freckle.

For me, that means controlling what I CAN: working out every day, and fueling my body with the kinds of foods that make me feel better, stronger and have enough energy to do everything I need to do, every day, with a smile on my face!

Will I ever have a 6-pack? Nope. But that’s not my goal. I’m just trying be as healthy as I can, so that I can wear that bikini with my head held high!

Let’s get to work, and get comfortable in our own skin!

Summer BODies Forming NOW!

I have spent spring days on my bed, just about in tears, because every article of clothing I pulled out of the box from the basement was either too tight, too small or too short. How could that happen in just 6 short months?! SO frustrating!

But we’ve got time! And where there’s a will, there’s a way! You provide the WILL, and I’ll provide the WAY!

Maybe you’re worried that you don’t have the time. I get it! I’m a busy mom of 4, and it can be done. You just have to adjust your priorities a little and put yourself at the TOP of your list! Two and a half years ago I stopped putting myself dead last, and my life has done a complete 180! When I spent some time working on me, the result was that everyone got the BEST of me! I’m a better mom, wife and friend, and it’s because I started taking care of myself along with everyone else.

Starting Monday, April 6, let’s get down to business!

Where do you want to be in June? Do you have a favorite sun-dress or summer outfit that is hanging in your closet that you are desperate to wear this year? Focus on that, and let’s get to work!

Some fellow coaches and I are going to be hosting a private support & accountability group on Facebook. We’ll be working out, eating clean, and keeping each other on track for 30 days! We’ll be sharing daily tips, recipes and motivation to help you reach your goals.

These groups work so well. Every month I have participants who share such amazing success stories! Losing 10-20 pounds in one month feels incredible. And for many, it’s just the beginning of a new healthy lifestyle! Over and over again I hear the same thing from my fellow busy moms. They have more energy and confidence and just have a more positive outlook on life in general. It’s so empowering!
