Husband’s View of Coaching

“Angie, you were doing it anyway!”

My husband is so stinking smart, for many reasons, but recently he pointed something out that made lightbulbs turn on over my head!

Last week he agreed to sit down with me for a live interview, sharing his thoughts about this whole coaching gig, from his point of view. How it’s affected me, our family, our income, our physical and mental well-being, our future goals, etc. We both know that spouses can be one of the main reasons people either jump in to something like this, or don’t.

Now this is a guy who won’t sugar coat anything! He’s the most honest person I’ve ever known in my life – incapable of speaking anything but the truth and exactly what’s on his mind! He even warned me that he might say something that wasn’t necessarily what I’d want to hear…but I took my chances.

He pointed out that it was a big adjustment at the beginning. I was spending time on my laptop and phone learning how to build a successful at home business. I was changing the way we ate as a family, and of course I was making sure I got my workout in every day – no matter what.

As a result, I was developing a new-found self esteem and confidence in myself. I was sharing my story on Facebook. And these things were new and different! He has always been very supportive of me, but he does not like ‘different’.

I started dating my husband when I was 15 years old! GASP! And he knows me better than anyone! To see such rapid changes happening was no doubt a little disconcerting. But he hung in there. We adapted. And we continue to make adjustments to be sure that we are doing what’s right for ourselves and for our family.

But he pointed out a couple of things that really stuck out to me.

He said, “When I considered the alternative – you going back to work, away from home 8-10 hours a day, buying a new work wardrobe, correcting homework all night, commuting to and from work, paying for before and after-school care, missing ball games and kids’ activities, etc…Beachbody coaching was the clear winner!”

And in a recent follow up discussion with him he said, “Well…you were doing it anyway – using the programs, working out, trying to eat healthy – you might as well getĀ paid to do it! The extra money you were making was just a bonus!”

See how smart he is?! šŸ™‚ And he’s right. I WAS doing those things anyway, but without all of the support, accountability and money in my bank account!

Healthier Instant Pot Zuppa Toscana

I LOVE a warm bowl of soup…especially when it’s freezing ass cold outside! My phone informs me that it feels like -3Ā° at the moment. I might need to take a BATH in this soup!

This Zuppa Toscana REALLY hit the spot. Only trouble is…I made it and didn’t have time to eat it right away. I thought I had planned it out to a T! I knew exactly how much time it would take to make in my Instant Pot – which isn’t long by the way! I freaking LOVE this thing! I just hadn’t allowed time to defrost the meat! DANGIT!

So the second it finished cooking, I had to run out the door to take my daughter to dance. I quickly blended up a chocolate peanut butterĀ Shakeology for the road, but knew that the steamy warm goodness would be there waiting for me when we returned. I didn’t even take off my coat. I filled up a bowl and slurped it down! SOOOooo good! And with an Instant Pot…SOooooo fast! (Just make sure you have thawed your meat first!) šŸ˜‰

Ingredients

    • 2 Tbs olive oil
    • 1 medium onion, diced
    • 1 lb ground mild Italian turkey sausage (or use this recipe if you only have the ground turkey)
    • 3-4 cloves garlic, minced
    • 3 large bakingĀ potatoes, unpeeled, halved long-wise and sliced into 1/4-inch slices.
    • 3 carrots sliced
    • 6 cups chicken broth
    • 2-3 cups fresh baby kale
    • 3/4 cup milk (unsweetened nut milks, 2% or half and half if you like to live dangerously!) šŸ™‚
    • salt & pepper to taste

Instructions

    1. Using the “saute” function of the Instant Pot, heat the olive oil. Add onions and cook until they begin to become translucent.
    2. Add meat, crumbling up into smaller pieces and cooking until browned.
    3. Add garlic and cook about a minute – until it starts to smell all nice and garlicky!
    4. Drain off excess grease if desired and return to pot.
    5. Add potato, carrot slices and chicken broth.
    6. Lock the lid into place and set to “sealed.”
    7. Cook at high pressure for 5 minutes on theĀ Manual setting.
    8. When cooking finishes, allow a natural pressure release for 10 minutes, followed by a quick release.
    9. When pressure valve has dropped, remove the lid and add kale to the pot. The heat from the soup will wilt the kale as you stir.
    10. Pour in the milk or half and half and desired amount of salt and pepper and stir to combine.
Makes about 6 servings.

Crack Slaw

There’s a reason this is called ‘crack slaw’.

It’s easy to stay on track when you find delicious food you could eat again and again. We fight over leftovers with food like this. šŸ™‚ It’s got a great flavor without pasta or rice to fill you up and make you feel bloated.
This is so quick and easy to make, too! Great for meal prepping for a week of healthy lunches/dinners. If you’re following a container nutrition plan (like 21 Day Fix) this is great! No yellows! Ā Those precious yellows can be hard to avoid…you won’t even miss the carbs. It’s also paleo-friendly!

IngredientsĀ 
1 pound lean ground turkey (or beef)
1 T. sesame oil (any oil would work)
2-3 cloves garlic – minced
3 green onions – chopped
1/2 large head green cabbage – chopped
1 carrot – shredded
1/4 cup broth (chicken/veggie whatever)
3 T low sodium soy sauce or liquid aminos
1/2 t hot sauce
1 t. vinegar (apple cider or white work fine)
1/2 t. ginger (fresh would be great! Dry is fine too.)
4-5 drops of stevia extract (or small amount of sweetener of choice)
salt & pepper to taste
Directions
Brown turkey or beef in skillet, seasoned with salt and pepper. Meanwhile combine soy sauce, hot sauce, vinegar, ginger and stevia. Once the meat is cooked thoroughly, remove from pan, drain and set aside. Add oil to pan and sautĆ© onions, garlic, carrot and cabbage. Add the broth. Cook until cabbage is as tender as you like. Add sauce mixture and meat. Mix to combine and enjoy!Makes 4 servings: 1 redĀ and 1 green

Simple Healthy Ramen

Quick second blog post today cause I shared my lunch on Facebook and lots of peopleĀ wanted the recipe. This seemed easier than privately messaging everyone who asked for it.

Remember back in college when we were dirt poor and didn’t know how to cook?!

Ramen to the rescue!

This isn’t the ramen we made in college…

But it’s become my new obsession! I’ve made this at least three times in the last week.

I buy millet and brown rice ramen at Costco (no sodium packets included). And then I use my own broth and fixins to make it deelish! This took me about 10 minutes start to finish! Less than 300 calories and 8 grams of protein in the noodles alone.

 

My Health Ramen Lunch

*serves 2 (or 1 if you you’re hungry and/or don’t like sharing)

 

 

 

Ingredients:

 

  • 1 t. sesame oil (or your fave oil)
  • 2 cloves garlic – minced
  • 1/4 tsp ginger (I used powder. Fresh is always nice.)
  • 2 cups broth (chicken, veggie, whatever)
  • 1/4 cup sliced mushrooms (fave variety)
  • 1 T. reduced sodium soy sauce or liquid aminos
  • 1 ramen cake (I use Lotus Foods millet and brown rice)
  • 1 cup leafy greens (spinach, kale, etc)
  • 1 carrot – grated
  • 2 green onions – sliced
  • 1 hardboiled egg (or lean protein of your choice, or skip it!) šŸ˜‰

 

Directions:

  1. Heat oil in sauce pan over medium heat. Add garlic and ginger. Saute, stirring frequently, untilfragrant (1-2 minutes).
  2. StirĀ in broth, soy sauce and add mushrooms.Ā Bring to a boil.
  3. Add ramen cake. Reduce heat and cook for 2-3 minutes until loosened. (Follow the directions on the package.)
  4. Add greens, carrot and onions. Stir until greens begin to wilt (1-2 more minutes).
  5. Serve and enjoy! (Careful! It’s blazing hot! Just like when you tried to eat ramen in college and it almost burned your face off!) šŸ˜‰

Just for fun…let’s compare the nutrition labels! Pay specific attention to the ingredients! And sodium! OMG!

College:

More ingredients than I can count or pronounce! And 830 mg of sodium!!!??? In HALF of a serving! And everyone knows if you’re making a package of ramen, you’re eating the whole thing! That’s 1660 mg of sodium!Ā The American Heart Association recommendsĀ an ideal limit of no more than 1,500 mg per day (no more than 2,300 milligrams (mgs) a day).

 

Not College:

2 Ingredients: organic brown rice flour and organic millet. Sodium: ZERO mg. Ummm…ya…no brainer here. And here’s the thing, it tastes amazing!

Mint Chocolate Muffins

Chocolate muffins thatĀ will fool friends and family members! These healthy, flourless muffins are quick and easy, 21 Day Fix – approved andĀ dee-lish! So moist and chocolatey, they are a perfect treat for when cravings strike! And nobody will know about your ‘secret ingredient’.

Ingredients

  • 1 (15-oz.) can chickpeas (garbanzo beans), drained, rinsed
  • 3 large eggs
  • Ā½ cup raw honey
  • ā…“ cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • 3 Tbsp. coconut oil, melted
  • Ā½ tsp. pure peppermint extract

Instructions

  1. Preheat oven to 350Ā° F.
  2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
  3. Place chickpeas, eggs, honey, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
  4. Place batter in a medium bowl.
  5. Divide batter among 12 prepared muffin cups.
  6. Bake for 10 to 12 minutes, or until toothpick inserted in center comes out clean.
  7. Cool completely and enjoy!

1 muffin = 133 calories and 4 grams protein

2017 is here! Big goals ahead!

I don’t know about you, but I’ve got BIG goals in 2017! I get excited about the new year – what’s not to love about the prospects to make this your best year yet! I’m looking forward to a full-recovery from foot surgery and very optimistic about returning to my beloved workouts in the coming weeks! It’s amazing how much you miss something that might formerly have been a struggle to do, when you’re told you can’t do it!

I’m so ready to start 2017 strong! I’ve been in such a slump! I have used every excuse in the book – some legit, some not so much – to NOT workout consistently the last couple of weeks!

I have felt discouraged that I can’t workout the way I want to until my foot heals from surgery. I feel lost without being plugged in to a program. WeĀ were super busy with the holidays. Our house has been in a state of total disrepair for over a month during remodeling. The kids have been sick off and on…

And blah blah blah! As a result I feel like yuck! I’m doughier than I’d like to be and I’ve fallen in to some old bad habits. And now I’m just over it!

I’m sick of myself and my excuses. The fact is I CAN workout – it just looks different than before. I can make time – even if I have to reschedule and/make a few sacrifices. I can eat healthy food – even if it’s a struggle sometimes.

I know how to do what it takes to feel better!
I’m done talking about it.
I’m just gonna do it!

Thinner Thinner Turkey Dinner

Recipes like this healthier green bean casserole! *I’m a sucker for a GBC! No canned soup in this recipe which cuts the calories, fat and sodium in HALF!

Ingredients

  • 5 Tbsp. whole wheat purpose flour, divided use
  • Ā½ tsp. paprika
  • Ā½ tsp. garlic powder
  • 1 medium onion, (Ā½ onion thinly sliced, Ā½ onion chopped), divided use
  • 3 tsp. olive oil, divided use
  • 8 oz sliced mushrooms
  • Ā½ tsp. onion powder
  • 3 fresh thyme sprigs, leaves removed and chopped, stems discarded
  • Ā½ tsp. sea salt
  • Ā½ tsp. ground black pepper
  • Ā½ cup nonfat milk
  • 2 Tbsp. dry sherry wine
  • 1 lb. frozen French-cut green beans
  • 1 cup nonfat plain yogurt

Instructions

  1. Preheat oven to 400Ā° F.
  2. Combine 2 Tbsp. flour, paprika, and garlic powder in a medium bowl; mix well.
  3. Add sliced onion; mix until well coated. Set aside.
  4. Heat 2 tsp. oil in large nonstick skillet over medium-high heat.
  5. Add sliced onion mixture; cook, turning once or twice, for 3 to 5 minutes, or until golden brown and crisp. Remove from skillet and place on a paper towel. Set aside. Wipe skillet clean.
  6. Heat remaining 1 tsp. oil in skillet over medium-high heat.
  7. Add chopped onions; cook, stirring frequently, for 2 to 4 minutes, or until translucent.
  8. Add mushrooms; cook, stirring frequently, for 5 to 6 minutes, or until the liquid released from mushrooms is almost completely evaporated.
  9. Add remaining 3 Tbsp. flour, onion powder, thyme, salt, and pepper; mix until vegetables are coated.
  10. Add milk and sherry; cook, stirring frequently, for 4 to 5 minutes, or until bubbly and slightly thickened.
  11. Add green beans; cook, stirring frequently, for 2 to 3 minutes, or until heated through.
  12. Add yogurt; mix until combined.
  13. Place green bean mixture in casserole dish. Top with onion mixture.
  14. Bake for 10 to 15 minutes, or until casserole is bubbly.

Counting My Blessings

I’m just sitting here reflecting on the last 4 years of my life, how I ended up here, and what I’d miss desperately if I hadn’t taken a little leap of faith.

I hung out with these beauties last weekend. We laughed our asses off. We cried our heads off. We did some hiking, played games, went for a run, ate delicious food and sat around soul-searching, planning and strategizing how to reach our goals and learn how toĀ help more people find a path to health and financial freedom! Not necessarily a typical ‘girls weekend’, but these are my people and I can’t imagine my life without them.

Four years ago I was struggling. Physically I just wasn’t where I wanted to be. I hated looking in the mirror. My clothes weren’t fitting and I was at a loss! I was working out almost daily. And eating what I thought was ‘pretty healthy’ food. Well…it wasn’t working. Not only was I not making any progress, I was steadily gaining weight and I was getting desperate! I even found myself lingering by the diet pills at the store, looking for a quick fix – though I knew better.

I called my friend who was a Beachbody coach, because I wanted to tryĀ a new workout program – and P90X had worked for me in the past – so I was ready to recommit and give it my best effort to see if I could make some changes and finally get results. That included Shakeology. Nutrition was key, and I knew it. I had done a LOT of research and as a busy mom, I just needed a quick, healthy meal that I could grab on the go. I justified the expense by giving up soda, fast food and fancy Starbucks. I saved even more money by signing up as a “coach” so I could save 25% on my Shakeology and any other programs or products I wanted. (I’m a lifelong Beachbody fan…so I knew I’d use it!)

I really had no intention of “coaching”, I just needed to work on myself first! Well, then I got plugged into a challenge group, and found myself surrounded by other moms and women working on goals of their own. I found it very motivating and I had GREAT success with it! Meanwhile… people were asking my what I was doing and I was sharing a little about my journey on social media. I had enough interest to put together a group of my own. And that started my coaching “career”. I’ve run at least one group every month since then, met hundreds of women in my challenge groups, networked with amazing ladies like these and found my true passion through helping others!

And now four years later, I make more than I did as a full-time teacher. I’ve lost 24 pounds and kept it off through my monthly accountability groups. I would NEVER ask people to do something that I wasn’t doing myself…so it’s amazing accountability! I’ve traveled to Las Vegas, Nashville, South Beach, beach house get-aways and in just a few months my husband and I will be heading on an all-expense paid vacation to Punta Cana! All for doing something I LOVE to do! Working part-time hours, from home, where, when, how and with whom I want! These ladies are just a few of the amazing women I’ve had the privilege to get to know and work with every day.

We have so much stinking fun together…it’s CRAZY to me that I didn’t know any of them just a few short years ago, and now I feel like we’ve been bff’s!

But don’t just take it from me! You know I’m a fan! This has changed my life and my families lives in more ways than I can count! I’m happier, healthier and wealthier!

I love being a coach because it’s a never ending journey of striving towards something bigger than yourself. I have a community of people who are (as I described to a friend today) “just BETTER people than me”. My community calls me HIGHER. I don’t get to stay stuck or become passive because there is always something to work towards bigger than myself!

Instant Pot Rice & Beans

This has quickly become one of my very favorite recipes to make in my Instant Pot. I have been using my Instant Pot almost once a day since I bought it back on Amazon Prime Day. As we speak, I have a sick kiddo at home and I am making homemade chicken stock for chicken soupĀ later (both in the IP).

It makes weekly meal prep a breeze! I can cook brown rice in half the time that my rice cooker used to take. It makes PERFECT hardboiled eggs every single time! The peels just slide off – no joke! It doesn’t matter how fresh or how old the eggs are either…the pot doesn’t discriminate. I’ve made dozens already…never disappointed.

I make homemade mac and cheese for the kids in about 15 minutes. You can use frozen or thawed meat for most recipes. It’ll even make pasta, veggies, potatoes, and even cheesecake!!! The possibilities are endless it seems! I have just scratched the surface! šŸ™‚

INGREDIENTS

  • 1 cup dry black Ā beans (red might work too)
  • 2 cups brown rice (I used short grain.)
  • 4.5 cups water
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp sea salt (optional)

DIRECTIONS

Use manual setting for 30 minutes.

Allow a natural pressure release for at least 15 minutes.

*You can double and freeze leftovers! My husband even put it into the food processor and made veggie burgers with it! šŸ™‚

Join me for the month of November!

We’re planking and thanking for 30 days in November. While you’re planking, you’ll have time to reflect about what you’re thankful for each day. We’ll be adding to our time and building towards a 3 minute plank! And we’ll report in one thing that we’re thankful for each day. By November 30th, you’ll also be thankful for a tighter, stronger core!

I received several messages after the group that this was the gentle push they needed to make some big changes in their lives! This is really so simple! At the most, it will take 3 minutes of your day! That’s it! Everybody has time for that. And it wouldn’t hurt any of us to slow down and appreciate our many blessings every day, but especially during the month of November.
