A Real Head-Scratcher…

I’m sure you’ve either heard someone say this, or maybe you’ve even said it yourself: “Life is too short, you might as well enjoy it!”

There is nothing wrong with that statement, right? Well…when you use it to justify why you eat unhealthy foods, and don’t exercise, than yes…there is something VERY wrong with that statement!

So let me get this straight… the way to enjoy life is eating fried, processed, high-fat, low-nutrition, artery-clogging foods and being sedentary? I guess I must have missed the boat on this one!

We all know what happens to people who spend their lives like this right? Poor nutrition and lack of exercise puts you at risk for just about every illness, ailment and disease there is! Let’s name a few, shall we?

  • Heart Disease
  • Cancer
  • Stroke
  • Hypertension
  • Diabetes (which can lead to blindness and amputation)
  • Obesity (costs 123 BILLION dollars/year in health care)
  • Osteoporosis
  • Prematurity (70% of cases are caused by poor nutrition, physical inactivity & tobacco use)

So how does one enjoy one’s life when they have to deal with any ONE of these conditions or even SEVERAL?

And, is itĀ fun to: take a bunch of medications? see your doctor all of the time? give yourself shots? struggle to get around? have difficulty completing necessary daily activities? be tired all of the time? have trouble sleeping? deal with aches and pain? watch your kids head down the same path? Did you know that 25% of kids ages 5-10 have high cholesterol, high blood pressure and other early warning signs for heart disease? One in five young people are obese and one in three are overweight.

I’m sorry…that just doesn’t sound like enjoying life to me! That sounds like a lot of heartache and suffering! All so what?! We can eat whatever junk we want to, and sit on the couch, watching other people DO what we CAN’T!? Is the price we’re going to pay really worth it?

Why not try to REALLY enjoy life! You may have to work for it a little, and it might be a struggle – especially at the beginning, but the REWARDS are long-lasting and life-altering! It’s at least worth a try, don’t you think?

Most of those diseases are reversible, if you start changing some of your daily habits NOW! The sooner the better! The formula is so simple: eat healthy foods, and move! That’s it! Start small, don’t expect to undo a life’s worth of bad habits overnight. You can begin by simply changing one small habit at a time. Set small goals first, achieve them, and set some new small goals. Replace processed foods with whole, natural foods. Instead of watching that t.v. show, take a walk.

There are thousands books, articles and movies about how to get started. Ultimately, you just have to find what works for you, but the key is to just start. Little changes, compounded daily, will equal AMAZING results! And I promise you, life will be SO much more ENJOYABLE when you can truly experience it, and not just watch it go by.

I would love to hear your thoughts about this topic. I don’t mean to belittle the real struggles that people have when it comes to health and fitness. I’m simply questioning the rationale, used by some, that this is how to enjoy life.

Oh. Em. Gee! This dressing is MONEY! I’m looking all over my house for things to put it on! Celery, carrots, spoons, bowls! I don’t buy dressing of any kind anymore, I just find it so much easier and healthier to make my own. Not to mention the artistic freedom I have, creating works of salad-topping art! Typically, I work in oils and vinegars…until my latest discovery…

Creamy Avocado “Ranch” Dressing!

*This recipe was inspired by aĀ dressing recipe from “The 21 Day Fix”. I just had to tweak a few amounts and ingredients for my taste!

WHAT IS THE 21 DAY FIX?!

Ā Ingredients

  • 1 medium avocado (cut into chunks)
  • 1 C. non-fat Greek yogurt
  • 4 T. finely chopped herbs (I used dill, chives and parsley)
  • 2 garlic cloves (minced)
  • 3 T. freshly squeezed lemon juice
  • 1/4 C. low-fat buttermilk (more to adjust consistency if desired)
  • Sea salt and freshly ground pepper to taste (lots of pepper for me!)
  • 1/3 C. extra-virgin olive oil

Directions

  1. Place avocado, yogurt, herbs, lemon juice, buttermilk, garlic, salt and pepper in a blender; cover (duh!). Blend until smooth.
  2. Continue blending avocado mixture, slowly adding oil until well-blended. *Use more buttermilk if you prefer a thinner consistency.
  3. Store in the frig, tightly covered, until ready for use. I filled a pint Ball jar to the top!

*This is tasty on salads, but also a great dip for raw veggies – and spoons! šŸ˜‰

Best News: There are only 34 calories in 1 Tablespoon of this dressing…so go ahead and have 2!

Bestest News!: All of the ingredients are SUPER clean and healthy. I bet you can pronounce EVERY one of them! Well…”herbs” can be a little tricky. The “H” is silent! šŸ˜‰

Unlike THIS chemical ____ storm ingredient list! YIKES! What the heck is disodium inosinate? My spell-checker doesn’t even recognize those as words, let alone FOOD! Blech!

What is the 21-Day Fix?

The Meal Plan

This has to work in real life! So she allows you to have things like chocolate and wine! You will develop behaviors during the 21 days that will become habits that will turn into a healthy lifestyle! Anyone can do this program! And you can do it again and again. As long as you want results, or whenever you need a short re-boot, this is your go-to program!

 

The Workouts

The program consists of 7 different workouts. Each workout lasts just 30 minutes and they are mixed up over the 3 weeks. The workouts can be done anywhere with very little equipment. Many of the moves are done with just body-weight. You’ll want a couple of hand-weights, and that’s about it. You’ll do a little of everything: yoga, pilates, strength-training, plyometrics, etc! The workouts are basic enough for beginners and challenging enough for more advanced users.

Chicken Fried Brown Rice with Veggies!

The key to making fried rice like you get in the restaurant, is using cold rice! So first, you have to ‘accidentally’ make too much rice for dinner some night. THEN, a couple of nights later, you have to remember that you MEANT to do that, so that you could make some fried rice! I used brown rice that I cook in my Instant Pot, because that thing RULES! I could NEVER cook brown rice right until I got one of those babies! Now, that’s ALL I make! Go ME! Ā You can eat this as a main dish, OR as a side dish with some delish Asian-inspired entrĆ©e! Either way, it’s a crowd-pleaser. šŸ™‚

Chicken Fried Brown Rice with Veggies!

Ingredients:

  • 1 T. coconut oil
  • 1 medium onion, chopped
  • 2 large egg whites
  • 1 Ā½ cups cooked brown rice, cooled
  • 8 oz. cooked boneless, skinless chicken breast (chopped)
  • 8 oz. frozen peas (about 1 cup)
  • 2 carrots cut into small coins (about 1 cup)
  • *or just add 2 cups frozen mixed veggies (or any veggie combos you like)
  • 2 T. reduced sodium soy sauce, or Braggā€™s liquid aminos
  • 1 green onion, sliced thin (for garnish ā€“ optional)

Preparation:
1. Heat oil in large nonstick skillet over medium-high heat.
2. Add onion; cook, stirring frequently, for 4 to 5 minutes, or until onion begins to soften. Reduce heat to medium.
3. Add egg whites; cook, stirring frequently, for 2 to 3 minutes, or until eggs start to set.
4. Add rice, chicken, peas, and soy sauce; cook, stirring frequently, for 3 to 4 minutes or until heated through.
5. Divide evenly into four serving bowls; garnish evenly with green onion.

Baked Buffalo Chicken Tenders

Perfect for the Superbowl or ANY time! This is a family favorite recipe! And since they’re baked, I don’t mind making them! I make lots of extra so that we have leftovers for wraps and salads, too!

Looking for some healthier food options to bring to a Superbowl party, or serve up to your team at home? These are SO good! I’ve made them this way for several years of Superbowls, and they’re ALWAYS a crowd-pleaser! You won’t miss the grease OR the bones! šŸ™‚

BAKED Buffalo Chicken Tenders

8 servings (adjust accordingly)

Ā½ C. all-purpose flour

Ā¼ t. paprika

Ā¼ t. salt (or seasoned salt)

Ā¼ t. cayenne pepper

Ā¼ t. onion powder

Ā¼ t. garlic powder

2 poundsĀ boneless skinless chicken breasts, cut into strips/tenders

Cooking spray

Hot sauce (Frankā€™s or your favorite brand)

1 dash ground black pepper

1 dash garlic powder

Blue Cheese Dip
Ā¼ cup nonfat plain yogurt
1 Tbsp. crumbled blue cheese

Directions

In a large Ziploc bag mix together the flour, paprika, cayenne pepper, salt, garlic and onion powder. Place chicken strips into the bag, a few at a time and shake until they are evenly coated. Repeat with remaining strips. Place coated chicken into a non-porous, glass dish. Cover and refrigerate for 60 to 90 minutes. *Do NOT skip this step!

Heat oven to 400 degrees.Ā  Spray large baking sheet with cooking spray, place chicken on the pan and spray the chicken until evenly coated. Bake the coated chicken for 30-40 minutes, (turning once) or until parts of the tenders begin to turn brown. Meanwhile, warm the hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until mixture is warm. Remove from heat and reserve for serving.

*For extra crisping, you can broil the chicken for 3-5 minutes at the end. Remove from oven, place baked tenders in serving bowl, add hot sauce mixture and stir together. Serve with celery and carrot sticks and a the blue cheese dip.

Nutritional info per serving (2-3 tenders)

Container equivalents: 1 RED and 1 tsp.

Calories: 158, Protein: 26 g.
