Mmmm… I’m drooling just thinking about how good this was!
I made this for a family visit yesterday, and it was a HIT! The kids loved it too! (Well…all but one, but he hates most everything I cook! Hoping he grows out of that!) đ
This is creamy comfort food, with WHOLEÂ food ingredients! *No red cans were opened for this recipe!
I love the way the quinoa crust on top turned out!
Feel free to get creative with your veggies and spices. There are a lot of combos that would be quite tasty I think!
Ingredients
Quinoa Crust:
2 eggs, large
2Â egg whites
1 tsp thyme, dried
2/3 cups sharp cheddar cheese
3 cups quinoa –Â cooked & cooled
Filling:
2 cups low-sodium chicken broth
1/2 cup milk
1/4 cup all-purpose flour
1 tsp salt
1 tsp black pepper, ground
1 bunch broccoli – chopped
3 garlic cloves – minced
1/2 large onion – finely chopped
4 cups frozen mixed veggies –Â thawed
3 cups cooked chicken breast – diced
2 t. olive oil
 Directions
In a medium bowl, whisk eggs and egg whites together. Add thyme, cheese, quinoa and stir to combine. Set aside.
Preheat oven to 375° F. In a small bowl, whisk broth, milk, flour, salt, pepper and set aside.
Preheat a large non-stick skillet on medium heat and add oil. Add garlic and onion, saute until translucent. Slowly pour slurry (broth and milk mixture) into the skillet, whisking and making sure no flour is left at the bottom of the bowl. Bring to a boil, reduce heat to low and cook until sauce has thickened, stirring occasionally to prevent burning. Remove from heat and add veggies and chicken and stir to combine.
Transfer to a 9 x 13 baking dish and flatten with a spatula. Drop spoonfuls of quinoa mixture on top and spread with a spatula to cover the filling evenly. Bake for 25 – 30 minutes. Let cool for 5 – 10 minutes, cut into 8 portions and serve hot.

So…I’m about one and a half weeks away from finishing up Body Beast! I will definitely be repeating this program. I have REALLY loved it! My only regret is that I didn’t chart my progress very well throughout the last 3 months. Boo for me! I’m always STRESSING this in my challenge groups, and then I don’t follow my own recommendations! Really dumb move on my part! BUT…I know I’ve made progress! I flexed in front of the mirror the other day and surprised myself! Where did those arms come from?
Over the summer, when I was training for the Chicago Marathon, strength training sort of took a back seat. Being a busy mom of 4 AND training for a marathon takes a LOT of time! But I really missed lifting weights and could ‘weight’ to get back to it! (See what I did there? As you can see…my arms aren’t looking particularly ‘ripped’ in my marathon picture! đ And that’s one of the great things about weight-training, you can really see results FAST! And in a couple of weeks…I’ll be starting my NEXT program…21 Day Fix EXTREME! (More about that later!)
So, now that I am in the ‘off season’, I’ve had time to do Body Beast AND work in some runs each week, too! I truly love to do BOTH!
Back in December, I did a fun little challenge to see if I could run 50 miles during the month. It was such a silly little thing, but it turned out to be VERY motivating! It was fun to tick off the miles as I went! And doing it in such a busy month, while living in Michigan in the winter…well…I was feeling pretty good about it!
So I’m doing it again!!!

I have been thinking a LOT about this lately, and I just felt like I wanted/needed to tell this story! Lately, I’ve had some realizations that have put everything into perspective for me. I decided to share this story because I want you to have a better understanding of who I am, and what makes me tick. 2 years and 24 pounds ago, I did not feel so wonderful. I was at a time in my life when I figured I had tried everything, done it all, and just wasn’t getting the results I wanted. I was THIS close to giving up – throwing in the towel.

Clean eating playdough? I don’t actually suggest EATING it, but the point is that you COULD!Â
Now I know that Playdoh (from the store), is labeled as non-toxic, but I wouldn’t suggest eating it! Would you?  A United States patent indicates it is composed of water, a starch-based binder, a retrogradation inhibitor, salt, lubricant, surfactant, preservative, hardener, humectant, fragrance, and color. A petroleumadditive gives the compound a smooth feel, and borax prevents mold from developing. That does NOT sound delicious, or consumable at all! Not to mention, if you leave the cap off, or even just cracked a smidge…it’s garbage. Instant odd-shaped marbles!
*Fun Fact: When the original inventors designed the Playdoh modeling clay it was intended to be used as wallpaper cleaner.
Homemade playdough, on the other hand, is made with just a few basic ingredients that you most likely have in your kitchen. The only thing you might not have is cream of tartar. You can get it in the spice aisle, and I make enough homemade playdough that I just make sure to have some on-hand. My kids LOVE playing with it! Even my older kids! HECK! Even I like to sit down and play when they get it out! It’s kind of soothing and mesmerizing! Don’t believe me? Try it!
So what does playdough have to do with health and/or fitness? Well, here is how I’m tying this all together! I have made an observation throughout the years that sometimes in order for me to find some ME time, I have to set the kids up with something FUN for them to do that will keep them busy for 30-60 minutes – just enough time for me to get in my workout! Homemade playdough is one of those things that keeps them occupied long enough for me to do my workout. I get out all of the cutting tools, rollers and toys, spread it all out on the table and let them go to work. So THERE…that’s how playdough is health/fitness related! Works for me!
This is my go-to recipe! And even though it feels like winter, it’s still technically fall, so a pumpkin-spiced dough recipe works just fine! But feel free to experiment and try other varieties! Christmas cookie (vanilla/nutmeg)? Peppermint candy (peppermint extract & red food coloring)?
To store, just pop it into a ziploc bag, and keep in the refrigerator for MONTHS! đ
Pumpkin Spice Playdough RecipeÂ
Ingredients:
1 cup flour
1 cup water
1/4 cup of salt (a little more if you use kosher)
1 tablespoon coconut oil*
2 teaspoons cream of tartar
2 teaspoons pumpkin pie spice (or a mix of cinnamon/nutmeg/cloves)
optional: food coloring or natural food based dyes (such as beet juice and turmeric)
Directions:
Combine all ingredients (except food coloring) in a large pot.
Stir over medium heat until a big ball forms. (It should be smooth and no longer sticky.)
Remove from the pot and allow to cool until the dough can be worked by hand.
Divide the dough into however many different colors you want.
Work the colors into the dough by adding a few drops at a time and kneading. (We used red and yellow to make orange but you can just leave it as is.  Other colors could be achieved with natural juices: beet, carrot, turmeric.)

* Coconut oil is the secret ingredient. It makes the best playdough EVER! If you haven’t tried it, I highly recommend it.

*When Shaun T was asked how is it different from Insanity and T25, he said essentially (i.e. not direct quote) it’s his only program that truly pushes you to test and track your limits so you can improve your fitness level. But he went on to say “ANYONE CAN DO THIS PROGRAM” because you can choose to see the modifier the whole time and because you can get more done in less time than Insanity (which is easier time-wise and mentally); yet it’s more intense than T25. He went on to say the modifier moves are still very effective to sculpt your body and admittedly in some instances MORE effective in building muscle and fitness than the jumping!
The NEW Insanity Max 30 which is scheduled to be available in a couple days… sometime on Tuesday December 2 HERE or through your coach’s site if I’m not your Coach.
These workouts are 30 minutes of pure intensity.
