I don’t know about you, but with all of the travelling and vacations, eating out, bbq’s, etc….I kinda lost focus a bit. My workouts slipped and nutrition too. It wasn’t a total loss, but I’ve got some work to do to get back on track! This is the perfect time to do just that!

Summer is winding down, and we’re about to get hit with busy schedules, kids’ activities, demands of our time, fall treats and goodies, etc… We can’t be the best version of ourselves to take all of that responsibility on without taking care of ourselves first! Lemon Berry Green Iced Tea

So my daughter is always trying to get me to take her to Starbucks for frappu-Ch-Ching-os (SO expensive! JEEZ!). I wasn’t in the mood for coffee, or for the price tag, so I tried one of the green tea chiller drinks (or whatever they’re called) instead. It was surprisingly delightful, albeit still a little pricey! So I was on a mission to create my own for a small fraction of the price!

I started looking up recipes, but they all called for making a berry syrup, with a ton of sugar. Blech! NOT what I wanted! So as per usual, I just took some ideas from a few different recipes and kinda did my own thang. The result was pure yumminess! This will be such a tasty summer beverage, and I can’t wait to experiment with some other flavors! The possibilities are endless!

For my first experiment I made this delicious…

Lemon Berry Green Iced Tea!

Ingredientsbigelow

  • cups water
  • cup raspberries
  • cup strawberries, chopped
  • bags lemon green tea (I used Bigelow green tea w/lemon) 
  • teaspoons honey, agave nectar (or sweetener of your choice)
  • lemon, berries to garnish 🙂

Directions

  1. In a large pot, bring water to boil and then remove from heat.
  2. Add berries, crush a little with a potato masher. Add tea bags and honey (agave or sweetener of choice), stir well and let sit for about 15 minutes.
  3. Pour through a strainer into a 2 quart pitcher. Cool to room temperature before transferring to the refrigerator.
  4. Serve in a tall glass over ice with a lemon berries or BOTH. Enjoy!

 

I am quite certain that this could be prepared as sun tea. I haven’t tried that yet, but it’s on my list of things to do this summer!

Ode to My Mom, the Queen of Earth Day!

My mom with her recycling ‘box’ (they don’t have bins to use). And her beautiful, steaming compost pile!

I always say my mom was earth conscious before it was cool. She has recycled, conserved and reused before these were even buzzwords that all of the cool people talk about now. Maybe it’s because she grew up on a farm, or maybe it’s because she was a bit of a hippie in the 60s. I just thought she was frugal and crafty, and sometimes…a little crazy.

She might have been the very first recycler in the town where I grew up. She recycled before there was even a recycling program. She would collect cans, plastic bottles, glass bottles, stryofoam and paper, and save them in our house. About once a month she would load up the back of the car and drive 20 to 30 miles away where there was a recycling plant. She would even collect other people’s cans and bottles and things, because it bothered her that they would get thrown into the garbage otherwise. There is some sort of a recycle program there now, but it’s not curbside, it’s not convenient, yet she does it anyway. She gets irritated that they won’t take all of the different numbers, so I think she still makes that monthly trip for the things they won’t accept in town.

She’s had a garden for as long as I can remember. She grew up on a farm so I think she has always appreciated being able to grow some of her own food. Her thumb is way greener than mine! If she gets critters in her garden, she finds a natural way to get rid of them or deal with them. She is currently at war with bunny rabbits! And a couple of years ago her garden had a nasty case of slugs. It keeps her busy. 🙂

At the end of her garden you will find a giant steaming pile of rubbish. I swear, this woman just hates to throw things away! My parents are master composters! I always thought it was weird that we took our food scraps out to the garden, but her garden is always beautiful. And those bits of apple peels, lettuce scraps and eggshells had something to do with that! Now I get it!

If she can’t recycle it, or compost it, she will figure out a way to reuse it. For example – and she will hate that I am telling this story again – but it has to be told. All through grade school she never once bought a bag of brown paper lunch bags. I had to use leftover bags from the grocery store, or the hardware store, or wherever else you might have gotten a bag. Sometimes they were medium-sized and other times they were the big, full-sized grocery bags. And if I didn’t bring them home to reuse for the rest of the week, she would get upset with me, and have to go find another bag in her collection. By the end of the week my lunch bag was looking pretty shabby. When I discovered that you could buy a big bag of normal-sized, brown paper lunch bags for like a dollar, I was miffed! Here I thought they must be very expensive because why else wouldn’t I get a new bag every day like everyone else at school. But now I get it, she was ahead of her time.

At the time I didn’t appreciate it, but my mom was very thoughtful. Not only was she thoughtful about the environment, she always made sure I was taken care of and well-fed. I never had prepackaged chips or HoHo cupcakes in my lunches, but I did have homemade snacks and healthy treats that she made and packaged herself. I want to be like her when I grow up!

I guess I just got used to some of the rather odd things that she did. When I was dating my future husband in high school, he finally asked me one day why my mom kept old empty bread bags in the freezer. I guess I never thought about it. She had just always done that. She would use empty bread bags instead of Ziploc bags. And her mom had taught her to keep them in the freezer so that any little bread particles didn’t get moldy and gross. Smart!

And this might be the funniest story of all. She believed she had found a use for dryer lint. She started saving different colors, and was going to make some sort of picture or collage out of it. Luckily, we talked her out of that project. Because… YUCK! She had taken it too far this time.

There should be some sort of award for people like her. She just did these things because it was the right thing to do. Why would you throw something away that could be reused or somehow turned into more of the same thing, or something entirely different? It wasn’t always convenient but she did it anyway. Call it frugal, call it environmentally conscious, call it whatever you want. But my mom is the queen of Earth Day and I’m going to make her a crown out of an empty oatmeal container!

10 Reasons Women Should Lift Weights!

I have done so many different types of workouts: cardio, dance cardio, running, kickboxing, yoga, etc…but nothing has ever given me the kind of results that lifting weights has! When I added strength training…I FINALLY saw the kinds of changes in my body that I had always wanted!

So I stick with what works, while including some of my other favorite workouts too, of course! I just make sure to lift weights at least 3 times each week. The heavier I lift, the better results I get! I used to be afraid I’d get ‘bulky’, but I was uninformed. The truth is, lifting weights made me leaner and stronger than I had ever been!

If you’re still not convinced that you need to lift weights, here are 10 reasons you should reconsider.

1. Burn more fat. It has been scientifically proven that lifting weights keeps your metabolism elevated for several hours after exercise.

2. Change your body shape. You will NOT get bulky! Women lack the body composition and hormones for that! Keep your nutrition clean, and you get leaner and toner and skinny jeans readier!

3. Boost your metabolism. As we get older, we begin to lose muscle tissue, bummer right! If you diet alone, you will lose muscle even faster! Lifting weights will help you build muscle tissue, thus elevating your metabolism, thus burning more calories all day long!

4. Get stronger and more confident. Strength training will make you better at every day activities too, like lifting kids, bags and bags of groceries, etc…And being stronger will make you feel confident and bad ass! (true story!)

5. Build strong bones. Women MUST lift weights to avoid bone loss! When you lift weights you improve your muscle strength and bone density at the same time! Say NO to hunched over brittle bones!

6. Fight depression. Endorphins are endorphins! Yoga, running, weights…it all makes you feel pretty damn good!

7. Improve sports fitness. Biking, hiking, skiing, whatever strikes your fancy! You’ll be better, stronger and faster!

8. Reduce injuries and arthritis. Your joints, ligaments and tendons will be more flexible and stable. This will help you stay safe! And even those who already arthritis see improved movement and strength with weight training. And less pain too!

9. Get heart healthy. Pumping iron, gets your heart pumping too! A pumping heart, is a strong heart.

10. Defend against diabetes. The more lean muscle mass your body has, the more efficient it is at removing glucose from the bloodstream when can reduce diabetes symptoms and prevent type 2 all together!

So now that you have 10 reasons…you just need a plan!

When I was first starting out, I didn’t have a clue what to lift, how many times, which days per week, etc…I would aimlessly wander around the gym just looking for things to pick up and put down. Not very effective. When I started P90X it was a relief to have a program that someone else had designed with a purpose in mind. It really takes all of the guesswork out of it for me! I’ve got enough to think about, I don’t have the time to figure out a weight-lifting program, too!

And since I got such great results with P90X, I was hooked on the at-home format. I cancelled my gym membership! Next I moved on to Chalean Extreme, Les Mills Pump, Body Beast, and now I cannot wait to start my next program!!!

I’m going to reveal my super secret plans for staying on track and in my skinny jeans throughout the holidays!

42days_0Hear me now! I will NOT gain 10 pounds over the holidays! I will not gain 10 pounds over the holidays! It’s just not worth the pain and aggravation AFTER the holidays to try to get it back off again! Now, if I was twenty-something, I might really weigh my options (pun intended). But I’m not twenty-something and when the weight comes around now…it likes to stay put. 🙁

So what’s my plan?! A brand new program called the 42 Day Fix! *Just kidding, there isn’t such a thing! But, there IS the 21 Day Fix and the 21 Day Fix Extreme, and when you put them together, you get 42 days that will take me up to the holidays with my health AND my sanity! Grilled Marinated Chicken Kebabs

First of all…you don’t have to ‘kebab’ this chicken if you don’t want to. You can just marinate it and grill it up…cause it’s really about the marinade! You could slather it on a shoe and it would still be pretty tasty!

But for the purposes of this recipe, let’s assume you’ll be grilling chicken (not shoes).

Ingredients

1/4 cup cider vinegar
1/4 cup extra virgin olive oil
3 tablespoons Dijon mustard
3 cloves garlic, minced
1 lime, juiced
1/2 lemon, juiced
1/4 honey
1 teaspoon kosher salt
ground black pepper to taste
This marinade is enough for about 5-6 skinless, boneless chicken breast halves.

Instructions

  1. Whisk all of the ingredients together.
  2. Cut up chicken (if making kebabs) into 1 inch chunks.
  3. Put the chicken in a large Ziploc bag and add marinade.
  4. Put the chicken in the fridge and try to marinate for at least 2 hours (less if you’re in a hurry and didn’t plan ahead).
  5. Place 5-6 pieces of chicken on each kebab stick (I pre-soaked mine so they wouldn’t burn).
  6. *Optional – feel free to add some veggies to your kebabs (mushrooms, peppers, onion, tomato…)
  7. Grill chicken over med/high heat and cook until juices run clear. (kebabs will take about 5-7 minutes on each side.

Then, when they were done grilling, I took the pieces off the stick, and shoved them into my 21 Day Fix container to see how many would fit! I was able to fit almost 2 full sticks in one red container – which was a lot of food!

Half Marathon + Strength Training…it can be done!

I love a good training plan, but sometimes I need to make my own in order to accomplish the goals I am trying to reach! This time around…I’ve set my sights on a half marathon. BUT…the one thing that’s missing from most training plans is STRENGTH training!

I LOVE to lift, because I love how I feel, and how my body looks with lean muscle mass. Too much running, and not enough lifting, and my legs turn into little toothpicks. I also love that lifting weights turns my body into a calorie-torching machine! Ya, I burn some calories when I run. But if that’s ALL I do, my body adapts and actually starts holding on to extra calories to fuel those long runs. When I lift, I get the benefit of the ‘after-burn’! I keep burning calories even after my workout is done! BOOM!

So…with my half marathon about 2 months away, I’ve been working with a schedule that allows me to do both! I always start with the basic Hal Higdon plan, and then modify in order to fit in the strength training that I want to do each week!
