Presto Pesto!

pestoI was just asked to share this recipe here on the blog, so that is just what I’ll do. Funny, because I just thawed out some of these babies yesterday to make dinner (I’ll share that one, too!) I LOVE pesto! My husband and I both do!

When I was in my 20’s, so like a million years ago, I was a waitress at an Italian restaurant. This was my first experience with pesto. My husband initially gagged at the look of it, it’s not the prettiest site! But once he tasted it, he was hooked! He ordered the same pesto dish EVERY single time he came in to see me – which was a LOT of pesto! šŸ˜‰

So…now I just whip it up myself. Easy peasy!Ā Ā I get fresh basil and garlic (sometimes the garlic scapes, which work well too!) at the farm where we are CSA members (community-supported agriculture). After I make a big batch (and a little goes a long way!), I like to freeze it and then pop out a few cubes at a time for different dishes I make. You can spread it on pizza, add to soups and sautĆ©ed veggies, chicken, fish… lots of stuff! Check out how easy it is to make it!

Pesto
Add to food processor (a blender will work too, might just take some stopping and starting):

  • 2 C. packed basil leaves
  • 4 garlic cloves
  • 1/2 C. pine nuts (walnuts work well too)
  • 1/4 C. grated parmesan
  • 1 t. lemon juice
  • Salt and pepper to taste
  1. *Give it a whirl just to blend
  2. Drizzle 1/4 – 1/2 C. Olive oil while spinning until desired consistency.
  3. Yum!

Now bust out your ice-cube trays and fill ’em up! Once they’re frozen, pop them out and put them into a freezer bag and save for a rainy, sunny, or partly cloudy day! šŸ™‚

So then yesterday I says to myself, “Self, let’s make some shrimp for dinner!”.

  • 1-1.5 pounds raw shrimp
  • apx. 4 pesto cubes (thawed)
  • 7-10 wooden skewers (soaked in water to prevent burning) or metal skewers if you want to avoid soaking

 

  1. CombineĀ raw shrimp with pesto andĀ marinateĀ a few hours in a bowl.
  2. Thread shrimp ontoĀ the skewers.
  3. HeatĀ an outdoor grill or indoor grill pan over medium-low heat until hot. Be sure the grates are clean andĀ sprayĀ or brush lightly with oil.
  4. PlaceĀ the shrimp on the hot grill andĀ cook until shrimp turns pink on the bottom, about 3-4 minutes.
  5. TurnĀ and continue cooking until shrimp is opaque and cooked through, about 3-4 minutes.

We served these with Zoodles!

I’M BACK!

I’ve been MIA for so long because 1) It’s vacation season, and we chose remote locations this year, making any sort of computer-use completely impossible! And 2) I decided to update my blog and host it myself, giving me some bells and whistles I didn’t have before! So bear with me…as I try to figure it all out!

Back to vacations…

We had a great time this year camping with 7 of my high school girl friends and our camping2013 (72)combined 22 kids! I am always amazed that we manage to pull this off every year! The kids have so much fun, and we just get to enjoy each other’s company – even as we deal with leaky tents, bug bites, boo-boos and the occasional raccoon!

I do not fancy myself much of a camper, but I’m getting better each year. This year, I even stayed a little longer than I normally do. I decided to suck it up, and take one for the team, which made my “team” very happy! I managed to stay on track pretty well with food and workouts. I abandoned the cooler this fridge_campingyear for a full-on refrigerator! I packed it with lots of fresh fruits and veggies, and of course all of my standard Shakeology fixins! My fantastic Target find, personal Oster Blender was PERFECT! I blended my shake every morning either for breakfast, or after my morning workout. I love when I can stick to my routine. It just makes me feel better, and then I can relax and enjoy my vacation, know that I didn’t set myself back so far that I need to start over as soon as we get home. It’s a win-win!

For workouts, I just packed my running shoes and some workout clothes and countedĀ on some runs, walks or stair workouts. There is a BIG long stair case leading down to Lake Michigan, and I wore a path up and down them MANY times! Ā I went for a couple of runs, too. Running or walking is such a portable exercise! You really can do it just about anywhere and any fitness level! And when you do it on vacation, you get to see new things, smell new camping2013 (77)smells and it just feels good to get out and do something active!

Apparently, my pepper-eating technique was intriguing enoughĀ that one of the kids went home and asked his mom if he could eat a bell pepper the way that he saw me do it while we were camping. He thought it was pretty funny that I just picked it up and ate it like an apple!Ā camping2013 (123)

All in all, it was a very fun trip! Between rain showers and thunderstorms, we managed to get some beach time! And we had a LOT of laughs and made some new memories that will be with us until next year, when we’ll do it all again!

StarvationLake-2013 (66)After that trip, we had a couple of days to unpack, unwind and then re-pack for a quick family get-away ‘up-north’. I wish we could have stayed a little longer, but we had a nice time relaxing, fishing, playing cards and board games, and just being together without the usual distractions.

Better Late than Never!

I did the meal plan! I swear! But I got caught up in all of the Father’s Day festivities yesterday, and just didn’t find a minute to post about it!

I had a couple of splurges over the weekend, just keepin’ it real! We went out for ice cream, and I used to always say, “No thank you”. But my kids began to hate that about me. They wanted to see me enjoying a dish of ice cream as much as they were. And so I decided, that since we go rather infrequently, it’s o.k. to have a scoop or two here and there. And for me I know that it’s not a slippery slope. I like ice cream, don’t get me wrong, but it’s not a ticket to nutrition disaster for me. Now french fries on the other hand…that’s going to be a problem. Therefore, I tend to avoid that temptation all-together!

Anyway…I digress. The point of my splurge admission, is that I’m looking forward to a week of planned meals and staying on track nutritionally. So far, I’m off to a great start! šŸ™‚ And I’m going to need it, because I also just started the second phase of Insanity. Today was the first workout of that madness, and OMG! Have you ever had to crawl to your water bottle?!

Chicken, Veggie, Berry Workout Salad

Do you like salads? Are you a multi-tasker? You simply HAVE to try this recipe! It’s so good, AND good for you! In just a few simple steps, you’ll have a beautiful and delicious salad that you can feel GOOD about eating! The ingredients are flexible, use what you like, don’t use what you don’t like, get it!? But the steps are absolutely a MUST! Non-negotiable! The salad won’t turn out right if you don’t do it right!

Ingredients:

  • 2-3 chicken breasts (or more, depending on how many people you’re feeding, and how chicken-y you like your salads)
  • 1 lemon
  • garlic salt
  • ground black pepper
  • olive oil
  • lettuce of your choice
  • veggies of your choice, but might I suggest the following: tomatoes, cucumbers, sweet bell peppers, green onions, avocado, celery…
  • berries of your choice: Strawberries and/or raspberries are deelish!
  • nuts or crunchy bits of your choice: I prefer slivered almonds.
  • reduced fat feta cheese (or not, up to you)

For the dressing:

  • olive oil (extra-virginy, of course)
  • balsamic vinegar (a goon one!)
  • Dijon mustard
  • s&p, or Spike, or Mrs. Dash…whatever you prefer

Equipment

  • meat pounder or rolling-pin
  • gallon-size Ziploc bags
  • gym shoes/clothes
  • wrist watch/clock/timing device

STEPS TO TAKE (a.k.a. Instructions)

  1. Put your chicken breasts into a Ziploc bag. Add freshly squeezed lemon juice (or the bottle kind will do in a pinch), a little drizzle of olive oil (maybe 1-2 teaspoons) a dash of garlic salt and some ground black pepper (to taste). *I don’t often measure when I cook…so that’s the best I can do.Ā pounded_chicken
  2. POUND out your frustrations until your breasts (correction: the CHICKEN breasts) are the same thickness throughout, about 1/2″-3/4″
  3. Place chicken in the refrigerator.
  4. Lace up your gym shoes.
  5. Get dressed in the appropriate workout attire.
  6. CRITICAL STEP! Workout for at least 45 minutes! No less! (More is acceptable, as long as it’s not overnight) Feel free to choose whatever exercise method you like. Might I suggest: a jog/run/walk outside if it’s nice weather, pop in your favorite workout DVD (Insanity, Chalean Extreme, Turbo Fire, Les Mills Pump, P90X…etc…), a yoga class, pump some iron! You get the idea!Ā lacing_up
  7. When your time is up, place chicken breasts on a pre-heated grill and cook for about 5 minutes on each side.
  8. Chop up lettuce and veggies.Ā *Don’t forget to flip those chicken boobs after 5 minutes!
  9. Whisk approximately 1 part olive oil to 2 parts balsamic vinegar + 1/2 part Dijon , minced garlic + seasonings in a small bowl.
  10. Toss the dressing with lettuce.
  11. Top with chopped veggies.
  12. Retrieve chicken from the grill, slice into strips and place desired amount on top of individually portioned salads.
  13. Don’t forget the nuts and berries!
  14. Enjoy!
  15. Shower!

Bucket List

Happy Memorial Day and unofficial start to summer. Here in the midwest, I have to say it doesn’t feel much like summer this weekend. But it’s been perfect weather for tackling all of the outdoor projects. I’ve shoveled many yards of soil and mulch this weekend and have the blisters and achin’ back to prove it! At least I wasn’t sweating profusely like in years past. So how’s that for looking on the bright side!? I am however, looking forward to steady, warmer temps ahead so that we can start checking off some of the items on our Summer Bucket List!

What is the “Summer Bucket List?”

On one of our many LONG car-rides, we decided to put together a list of things that we’d all like to try to do this summer. The kids came up with some really good ideas. Some of them are so simple, like: skipping stones and climbing trees… šŸ™‚ But they’re important just the same. Other items that came up made me laugh. I came to the realization that we have never, ever, all 6 of us together at the same time, been to a movie theatre! Well…perhaps it’s because we would have to take out a second mortgage on the house in order to afford such an outing! Lucky for us, in the small town where we live now, there’s a cute little old-timey movie theater that is MUCH more affordable than it was for all of us to go when we lived near Chicago. So, I think we’ll be able to check thatĀ off the list after all!

We’ve already been able to cross off a few. We’ve had TWO bonfires already and we just picked asparagus the other day! SCORE!

They want to watch stars, chart the moon’s phases, stay up late and watch for shooting stars, go fishing, eat corn on the cob, fly kites, watch a sunset, etc….

One that made me smile was when they decided they wanted to save up some money over the summer and donate it to a good cause. <Pitter Pat> goes my heart!

It’s funny, but most of the 40 items they chose would cost very little to NO money at all! And that makes me happy and also realize that the little things really mean the most when you’re a kid!

So here’s to summer! Go make a Summer Bucket List with your family! You might be surprised with some of the ideas they come up with for must-do summer activities! šŸ™‚

CAUTION: Busy Week Ahead, Meal Plan

What do you do when you KNOW you’ve got a busy week on tap? PLAN! I don’t anticipate that we will follow this to the letter, but just sitting down, and looking at my calendar and thinking ahead almost guarantees that I’ll do better than if I hadn’t done any planning at all. At least I’ve given it a little thought, so that when we’re coming home from an all-day play practice dress rehearsal on Thursday, I’ll hopefully have cooked up some turkey taco meat on Wednesday so that we’ll have dinner on the table shortly after we get home. What’s the alternative? Probably ordering out or grabbing some crap on the way home. I’ll make sure we have lots of good snacks packed up so that nobody is dying of starvation while we’re out, or on our way home. And even as I sit here typing, I’m thinking and planning ways to make this a good, healthy week, despite a VERY busy schedule.

A note about “FFY”. This one makes me smile. When my husband and I were newly married, and both working full-time jobs, I would leave him a note in the morning about what to expect for dinner (SEE? I was even planning WAY back then!). And sometimes that note would simply say: “FFY”, which meant “Fend for Yourself”. That usually meant that we had some sort of leftovers, or at least some deli meat or cereal he could choose from. There aren’t many things that my husband can’t do…but cooking is one of them. He once tried to make instant pudding with water. Another time he TRIED to make a grilled cheese sandwich the way that I made them and ended up buttering both sides of each slice of bread and simmering it over low heat in a pan of vegetable oil. Not quite right. He slopped his creation down on a paper plate, at which point the oil was wicked into the plate until it was entirely saturated. He did not eat this sandwich, and never tried again. This week requires at least one FFY night. Let’s hope for the best! šŸ™‚

Weekly Meal Plan for March 3 – 9

So HERE is the meal plan for this upcoming week. I’m still trying to figure out what is the best method to share this, but for now this will do. If you click on the image above, it should bring up a printable page, linked to the recipes that I plan to use throughout the week. Now, there is always some wiggle-room here, but this is the outline I intend to work with for the week. Last week, I stuck with everything on the plan until Friday, when we were supposed to have baked tilapia, and then we found out that friends were coming for dinner. I had to change the plans because there wouldn’t have been enough for everyone. Instead, I made the whole wheat pizza recipe, also on my site here. It’s a family friendly, crowd-pleasing recipe that takes a little effort, but makes for a fun dinner to share because everyone can get involved in the process.

To prepare for this weeks meals, I’ll be doing Ā a little prepping and pre-cooking. I’ll grill up a couple of chicken breasts for salads/wraps. I plan to make up some homemade Larabars, a cheaper and healthier alternative to store-bought, pre-wrapped snack bars. I probably cook up some quinoa, too, to use in various salads and sides. Just a little work now makes the week go so much more smoothly!

Little Things Mean a Lot

So 13 years ago today, a very tiny person came into my life. So tiny in fact, that she weighed less than a pound. She weighed 450 grams, she was 15 weeks early and she needed to fight for her life for the next 5 months. She was given a 0% chance of surviving. ZERO.Ā  Boy, were they were wrong!

So that person is my daughter, the oldest of myĀ four children. As you can imagine, those 5 months were incredibly challenging, scary, sad (we lost her twin brother after only 3 weeks), and overwhelming. I wasn’t able to hold her until a month after she was born, and she was so tiny and fragile, it was terrifying! I would cup her back with one hand, and her bottom with the other hand, and press her against my chest. When I held her like this, you could barely see her head above my hands. To say she was little, is an understatement!Ā kangaroo1

But she was everything!Ā  The next five months, she would teach us many things! She endured so much more than anyone could ever imagine: four surgeries, daily IVā€™s and heel pricks, numerous blood transfusions, infections, set-backs, etc. Today, she is covered in scars, though the doctors promised us they would go away with age (she doesn’t mind that they didn’t). She was TOUGH as nails through it all; this tiny little personā€¦HOW did she do it?

Iā€™ll never know HOW she did it. The doctors donā€™t understand how she did it! We were told she was the smallest baby born in Chicago to survive at that time (the year 2000)! She is a miracle to be sure!

She has taught me that anything is possible in this life. If you want something bad enough, you can fight for it, you MUST fight for it! She has taught me to take nothing for granted. You never know what is going to happen tomorrow, but you have today. Take advantage of every little opportunity, appreciate every little thing that you have, and live every moment to its fullest!

Celebrate the small things! Look for victories, and opportunities! Donā€™t let this life pass you by without giving it all you have! Start each day with a determination to make it the best possible day you can. Love the people around you who lift you up every day and support you in all that you do. Return the favor; hold someoneā€™s hand when they need it. Enjoy life, because every second is a gift. Be present and see the magic that exists in everything. Every little thing! Those little things turn into BIG things in the blink of an eye!

Today, my daughter is 13 years old (my FIRST teenager!) and she is 88 times bigger than she was the day she was born! Now, her foot is bigger than her whole body was at birth. She has scars and glasses and she is perfect. She is the biggest, little thing that ever happened to me! And she is a living reminder that there is JOY, love, hope, and promise in the little things. Seek them out, celebrate them, and embrace them every day!

Five months ago, I didn’t know a lot of things. I didn’t know what Instagram was. I didn’t know that I was stuck in a rut. I didn’t know that I had 20 pounds to lose. I didn’t know that I was capable of getting a group of friends or family members together that wanted to get fitter and healthier. I didn’t know that I could be a more confident person. In September, I took a step that changed all that!Ā That was then…

This is NOW…

I became a Beachbody coach. Now, I not only know what Instagram is, I have followers: over 400 people who are interested in the pictures I take and the things I have to say! Who knew? I had Instagram on my phone in the past, but I just thought it was a nifty picture-taking app. I had no idea that it was a social network! I like it quite a bit! I am a very visual person, so I like seeing what other people post. I get good, practical ideas about health and fitness, and other topics. But it’s so much more than that! I like to follow other people who are on their own health and fitness journeys. It’s kinda fun! You can follow me @AngieinProgress! I’ll follow you back. šŸ™‚

Except for 4 pregnancies with mandatory bedrest, I have worked out, almost every day, for YEARS! BUT…I used to do pretty much the same workouts, the same way. I was in a rut. My body wasn’t changing, and I was complacent about it. I thought that was the best I could do. I even KNEW that the body adapts and stops responding after about 30 days of the same exercise routine, but for some reason…I didn’t change what I was doing. Then, I became a coach, and in the interest of “being a product of the product” I decided to give Turbo Fire and ChaLEAN Extreme a 90 day try. I did a hybrid of the two programs. What fun! I started looking forward to my workouts, instead of feeling obligated to do them. My body started responding a very positive way. My workouts were different! And every 30 days, by design, the workouts changed a little, and my body responded again. It was like magic! I dropped 16 pounds and 14 inches in those 90 days! I was shocked and THRILLED, and out of my rut! I like it better out here. šŸ™‚

Since then, I switched up my routine yet again. Now I’m doing a program called Les Mills Pump that I am really enjoying! Again…my body is changing and I’ve lost another 4 pounds! Now here’s the thing…I had no idea that I had 20 pounds to lose 4 months ago. I would have been happy with 10 actually! But just last night my husband said the nicest thing to me: “Ang, you are in the best shape of your life! You look amazing!” WOWZA! This coming from a man who has known me since I was 15. So I’ll take it. šŸ™‚

The biggest perk of my new job is that I get to work with groups of other people who are trying to get fit and healthy, too! I get to tell them that they can do it, too! Health and fitness is for everyone who wants it. You’re going to have to work for it, it’s not always going to be easy, but if you want it…it’s yours for the taking. And the rewards are worth it! You’d be hard-pressed to find anyone who regretted the decision to get fit and healthy. I’ve had groups with my closest friends in life, my family members, and people I’ve never met in ‘real’ life, but have been motivated by something I posted on social media to make a change. I love that! These challenge groups are so fulfilling for me. I love reading about the successes that participants are having. It is so rewarding to see them overcome obstacles and get results! I feel so grateful to be part of the process. Now I’m sharing the coaching opportunity with other people who are interested in additional accountability for themselves to continue on their journey to health and fitness, while paying it forward to other people. AND the additional income isn’t bad either!Ā This does not seem like work to me! I look forward to it EVERY day!

I have a more confidence now than I’ve ever had before. I’m letting go some of the negative body images I’ve had in the past. I don’t focus on the ‘flaws’ that used to jump out at me every time I looked into a mirror. I’m not saying that I’m cured 100% from my self-consciousness…I don’t know if anyone ever could be, but it’s a million times better! I used to run from anyone holding a camera. I HATED having my picture taken! My flaws seemed magnified through a camera lens somehow. Now, you just have to look at my Facebook page to know that I don’t have a big problem with that anymore. But if you had told me 5 months ago that not only would I have a new profile picture, but evenĀ more pictures of myself available for the world to see, I’d never have believed you. In four short months, I’m healthier, happier, confident-er and fulfilled-er than I was when I was down in my rut.

If you’re in a rut, personally or professionally…I encourage you to come on out! Take a risk. Leave your comfort zone. Be the change you want to see. Start today.
