Well these were super easy peasy to make and quite delicious! Is it wrong that I want to hide them from my kids?
It never fails, when I make a healthy ‘treat’ for myself on the weekends, that I could enjoy for the entire week, the kids have them gobbled up before the week even starts. And they found these right away because the house smelled amazing! They were like vultures, trying to pop steaming hot muffins from the pan fresh out of the oven! Maybe not the ‘smartest’ vultures! 😉
I am starting the 21 Day Fix Extreme again this week, and these are approved for the meal plan! 🙂 I like them because they are not sickeningly sweet – but just enough to satisfy a little sweet tooth without making you feel like you need MORE!
So here is how I made them:
Blueberry Pancake Muffins
*I made 24 MINI muffins! If making larger muffins, you’ll need to adjust the baking time.
1 1/2 cups almond flour (I get mine at Costco – but you can also find Bob’s Red Mill and other brands)
1/4 cup plain Greek yogurt (I like Fage)
2 T. coconut oil
2 T. honey, maple syrup or sweetener of choice (I used coconut sugar for this one)
1 tsp. vanilla extract
1 tsp. baking soda
1/4 tsp. sea salt
2 eggs + 2 whites
1 cup fresh or frozen blueberries (or ANY berries!)
Preheat oven to 350 degrees and spray your muffin tin with cooking spray.
Place all of the ingredients except the berries into a blender or food processor and pulse until smooth – it will be thickish.
Fill the muffin cups 1/2 – 2/3 full and spoon the berries on top. Poke them in a bit and they will sink as they bake.
Bake for 10-15 minutes, until the tops are lightly browned and spring back when you press them.
And it’s SO much more WONDERFULLER when you feel good!
2 years and 24 pounds ago, I did not feel so wonderful. I was at a time in my life when I figured I had tried everything, done it all, and just wasn’t getting the results I wanted. I was THIS close to giving up – throwing in the towel.
I am a busy mom of 4, and really…who cares right? WRONG!!! I cared! Of course I did! I was just trying to convince myself that I didn’t, because facing the reality that nothing I was doing was working was hard to swallow.
One more try, I told myself. Give it all you’ve got! Commit 100% and see what happens…
Fast forward 2 years I lost 24 pounds, just by eating healthy foods and working out at HOME – doing programs I LOVE! I feel better than ever, have more energy, more confidence and just a better outlook on life in general! I ran a marathon for crying out loud!!!

This is REALLY exciting for me! When I started coaching and then blogging almost 2 years ago, I started following a blog called Fat Chick to Fit Chick. I loved the way that Jennifer wrote, she’s HILARIOUS and insightful and full of wonderful pop-culture references! I LOVE funny people and all things funny! Besides that, she is so dang inspiring! Her transformation and her journey had me hooked! I have also used many of her recipes and workout ideas!

So…I’ve been following her blog for quite some time. And I also follow her on Instagram and Facebook. I truly admire her. She has a sweet little girl she calls “Tink” and her husband Tim is hilarious, too! It’s funny how you feel like you sort of get to know these people you follow on Social Media, and to me, she had become a bit of a celebrity!
Therefore…when I contacted her about doing a Challenge Group with me, and she said YES! My heart was all a flutter! 🙂 She has been intrigued by The 21 Day FIX, so that is the program that she and her husband Tim will be doing in my next, very special edition, Challenge Group! You know I’ve talked a lot about this program in other posts, but I truly can’t say enough about it! I’ve seen SUCH amazing results with it! It is SO effective because it combines Fitness AND Nutrition! And let’s be honest…NUTRITION is the key!
