Chicken, Veggie, Berry Workout Salad

Do you like salads? Are you a multi-tasker? You simply HAVE to try this recipe! It’s so good, AND good for you! In just a few simple steps, you’ll have a beautiful and delicious salad that you can feel GOOD about eating! The ingredients are flexible, use what you like, don’t use what you don’t like, get it!? But the steps are absolutely a MUST! Non-negotiable! The salad won’t turn out right if you don’t do it right!

Ingredients:

  • 2-3 chicken breasts (or more, depending on how many people you’re feeding, and how chicken-y you like your salads)
  • 1 lemon
  • garlic salt
  • ground black pepper
  • olive oil
  • lettuce of your choice
  • veggies of your choice, but might I suggest the following: tomatoes, cucumbers, sweet bell peppers, green onions, avocado, celery…
  • berries of your choice: Strawberries and/or raspberries are deelish!
  • nuts or crunchy bits of your choice: I prefer slivered almonds.
  • reduced fat feta cheese (or not, up to you)

For the dressing:

  • olive oil (extra-virginy, of course)
  • balsamic vinegar (a goon one!)
  • Dijon mustard
  • s&p, or Spike, or Mrs. Dash…whatever you prefer

Equipment

  • meat pounder or rolling-pin
  • gallon-size Ziploc bags
  • gym shoes/clothes
  • wrist watch/clock/timing device

STEPS TO TAKE (a.k.a. Instructions)

  1. Put your chicken breasts into a Ziploc bag. Add freshly squeezed lemon juice (or the bottle kind will do in a pinch), a little drizzle of olive oil (maybe 1-2 teaspoons) a dash of garlic salt and some ground black pepper (to taste). *I don’t often measure when I cook…so that’s the best I can do. pounded_chicken
  2. POUND out your frustrations until your breasts (correction: the CHICKEN breasts) are the same thickness throughout, about 1/2″-3/4″
  3. Place chicken in the refrigerator.
  4. Lace up your gym shoes.
  5. Get dressed in the appropriate workout attire.
  6. CRITICAL STEP! Workout for at least 45 minutes! No less! (More is acceptable, as long as it’s not overnight) Feel free to choose whatever exercise method you like. Might I suggest: a jog/run/walk outside if it’s nice weather, pop in your favorite workout DVD (Insanity, Chalean Extreme, Turbo Fire, Les Mills Pump, P90X…etc…), a yoga class, pump some iron! You get the idea! lacing_up
  7. When your time is up, place chicken breasts on a pre-heated grill and cook for about 5 minutes on each side.
  8. Chop up lettuce and veggies. *Don’t forget to flip those chicken boobs after 5 minutes!
  9. Whisk approximately 1 part olive oil to 2 parts balsamic vinegar + 1/2 part Dijon , minced garlic + seasonings in a small bowl.
  10. Toss the dressing with lettuce.
  11. Top with chopped veggies.
  12. Retrieve chicken from the grill, slice into strips and place desired amount on top of individually portioned salads.
  13. Don’t forget the nuts and berries!
  14. Enjoy!
  15. Shower!

Challenge = Change

ChallengeChangeAs I’m getting ready to open my eighth monthly health/fitness challenge, I’m struck by some of the results that I’ve seen come out of them! I’ve heard from a few previous challenge participants over the last couple of days and their results are more than encouraging! These kind of results prove that true change happens when you challenge yourself to replace old habits with newer, healthier habits. It’s the lifestyle change that sets these amazing transformations into motion! The purpose of these challenges is not to get you in the best shape of your life in only 30 days. Rather, it’s to learn how to take care of yourself, and find motivation that you never knew you had, so that you can continue on your journey beyond the challenge.

They say it takes 21 days to form a habit. I’ve seen it happen time and again. Once you get used to the idea of eating cleaner, healthier foods, and making your daily workouts non-negotiable, you start to tackle every day with a new determination and purpose.

These challenge groups work because they combine all of the crucial elements. You get to pick a workout that suits you. Not everyone is expected to do the same workouts, what fun would that be? You have to find something that you enjoy, so that you can stick with it! The good news is that there are MANY to pick from. I personally have done Turbo Jam (seems like a million years ago!), P90X (all 90 days!), Turbo Fire, Chalean Extreme, Les Mills Pump and now Insanity! Some people think that DVD programs would never work, or that they might get boring. That might have been true 10 years ago, but they have changed! You don’t just get one or two DVD’s, you get an entire folder full of DVD’s, each with different workouts, meant to be done on different days. Furthermore, there is a always program calendar to follow (usually 60-90 days) developed by fitness professionals that understand the importance of muscle confusion and well-timed rest days, etc. AND, there are usually some REALLY good tunes to work out to, which always helps me stay motivated!

The second part is nutrition. This was the game-changer for me. I always thought I ate pretty ‘healthy’, but I was definitely eating a lot of processed foods with labels like “low-fat”, and “sugar-free”, thinking that these things were healthy! Now, I’m not saying I don’t eat anything with those labels anymore, but I have switched a lot of it out for clean, healthy, unprocessed, whole foods. When I did, I started to see results like I had never seen before. I was so skeptical about Shakeology before I started, but honestly… now I can’t imagine a day without it! It is so satisfying, and full of nutrition! It curbs my cravings (especially the sweet-tooth cravings!), keeps me regular (if you know what I mean) and gives me enough energy to get through my very busy days! I drink it as one of my 5-6 small meals each day. Eating more often throughout the day, instead of 3 BIG meals, keeps me satisfied all day without the need to STUFF myself because I’m starving! You’ve heard the saying: “Abs are made in the kitchen”, and it’s true! You can work out everyday at high intensity, do crunches and planks galore, but if you’re not eating the right kinds of foods, you’ll never see what’s going on under that belly fat. I always share my meal plan, as well as some of the recipes that I’ve discovered along the way. It is NOT a diet, it’s a lifestyle change!  diet_over

The third and most important element is ACCOUNTABILITY! You can exercise and eat healthy all on your own, right? Well, when you have a group of people, who all have similar goals and expectations, and you report to them every day about your workouts, nutrition, victories and struggles…it just takes it to a whole new level! There’s just something about knowing that you’re going to tell people either “I crushed my workout today”, or “I skipped my workout today”, that motivates you to get it done! You’ll get to look forward to weekly progress checks and celebrate with the group when you’re making progress! Having that kind of support makes the process so positive and fun!

So without further ado, I’d like to share some of the results that have been reported.

  • Since I started, I’ve lost 22 pounds and about 16 inches. (Chalean Extreme, TurboFire, Les Mills Pump & Insanity + Shakeology)
  • Jen has lost 24 pounds and 21 inches! (Chalean Extreme & cardio + Shakeology)
  • Michele has lost 21 pounds and 23 inches! (Chalean Extreme, Turbo Fire, Hip Hop Abs + Shakeology)
  • Gretchen is down 27.5 pounds since she started a few months ago! (Turbo Fire & Yoga)
  • Barb is 62 years old and so far has lost 17 pounds and 19 1/2 inches! (Walking, body-weight exercises & Tai Cheng + Shakeology)
  • My mom, age 63, is down 7 pounds and 6 inches, and looks & feels better than ever! (Slim in 6, Turbo Fire, Chalean Extreme and running)
  • Lisa went from a size 14 to a size 8 and is down a total of 24 inches! (Chalean Extreme + Shakeology)
  • Jessica has lost 12 pounds and over 11 inches and is close to being as fit as she was when she was a college athlete! (Les Mills Pump & cardio + Shakeology)

And these are just a handful of the results I’ve seen! There are lots of reports of losing 10 – 15 pounds in the 30 days of the challenge, but it’s the results that go beyond that, that are SO incredibly inspiring. My View from the Front Row

lift_spiritsSo, I posted this picture on Facebook the other day, because I liked the message quite a bit. The day before that I posted some pretty amazing results from a couple of my favorite challenge group members, who also happen to be my aunt and my cousin. I have a challenge group going with some of my cousins and my aunt and they have all been so gracious, kind and thankful ever since I invited them to get started. BUT, I insist that THEY are the ones who deserve all of the credit, and that I’m just fortunate enough to get a front row seat. This is truly how I feel about it.

You can’t get the results these ladies are getting without a strong desire to change. It comes from inside of you. You can be inspired by others, and motivated by things you see and hear, but until you flip that switch that’s someplace inside of you, at the right moment in time, nothing can happen. I just have to hope, that what I say and do connects with someone at just the right time, because that’s when the magic happens. Once you flip your switch, you’ll just start to get it. You’ll want it. You won’t stop until  you reach your goals. And then you WON’T stop, because it’s not something that has a beginning, middle or end. It’s a process. It’s a journey.  And if I’m lucky, I get to be there to see it…from the front row!

Losing weight and getting fit and healthy is so much more of a mental battle than a physical one. It’s a mindset. It’s taking the little steps everyday, knowing that this isn’t a quick fix, it’s a lifestyle change. If you don’t want the life-change, than it will never work. Let me say that again: If you’re not willing to change your life, IT. WILL. NEVER. WORK. You really can’t ‘dabble’ in health and fitness. There’s no sense in it. Why would you kill yourself in the gym for an hour, and then stop and get a cheeseburger on the way home? You have to flip your switch to ON. You have to commit to change. And here’s the good news: it’s totally, entirely, incredibly, unbelievably do-able! You can ask anyone of the challengers from my groups who have ‘gotten it’. They switched ON and it all makes sense now!

Here is the secret: Eat clean and exercise. That is it. There is no fad diet that will do what those two things will do for you. Will you have to change your habits? Yes. Will it be hard at first? You bet. Can you do it? I’ve seen people busier, older, more tired, with more physical restrictions, crazier work schedules and more excuses than you, and they’re doing it. How? Their switch is ON! That is all it takes. Because it changed their priorities, the way they use their time and their mindset. I have had a front row seat to see the journey they’ve been on ever since, and they are my motivation!

And here is the nicest thing anyone has said to me in a long time. When I insisted that THEY take all the credit for the hard work they had done, my cousin said this (I’ve copied it and saved it because it really meant the absolute world to me): “you definitely deserve some credit! Without you, I wouldn’t be where I am. I wouldn’t have started… We each have to individually and physically take responsibility for what we put into our bodies for fuel and for what exercise we do with our bodies, but because your heart is so strong (you lift our spirits so much!), you are giving others the strength and confidence to do this, when maybe they couldn’t/don’t do it on their own! Like I said… thanks is not enough. You have a gift and it is such an awesome thing to share with others! You are the greatest coach ever! And I am so glad you like the front row seats!!! THANK YOU, THANK YOU, THANK YOU! ”

Top Ten Reasons You Should Find a Workout Buddy

Having a workout/healthy-living buddy is SO helpful in SO many ways! If you are married, or have a significant other, you’ve already got a prospective partner. Do they need some convincing…get on it! Maybe you have a best friend or sibling that has similar goals…get them on board! How about a neighbor? Talk about convenience! Develop a plan, share a babysitter and make it happen!

Here are 10 reasons you should find a buddy:

1. Having a reliable workout buddy increases the chances of sticking with your program. It’s never a good feeling to let someone down.

2. You’ll have your own personal cheerleader; someone to push you when it gets hard. How often do we give up when something seems too difficult? Your partner can “spot” you when you struggle and pat you on the back when you pushed through it!

3. Time flies with a friend. You’ll be chatting and laughing and so busy sharing your workout time, that it’ll be done before you know it!

4. You can coordinate your busy schedules. You can sit down with your pal and figure out where your windows of opportunity are and then schedule your workout times! You’ll be more likely to stick to it, if someone else is relying on you.

5. You’ll be less likely to cancel. Again, if someone else took the time to fit it in, you will too!

6. You’ll have a talking mirror. Sometimes it’s hard to see and appreciate your own progress. A buddy will remind you that you couldn’t lift that weight last week, and look at you now! Or tell you that your clothes are looking a little baggy, or that you seem to have an extra ‘bounce’ in your step. 🙂

7. You’ll have an additional challenge; a little healthy competition! It’s ok to let someone else drive you to do more! You’ll want to match their intensity, and you’ll push yourself harder to keep up!

8. You’ll get a fresh new perspective and new ideas! You’ll get a chance to see how someone else does it. Maybe they do something a little differently than you do, and it’s easier, or more effective.

9. You’ll be paired up with a ‘fit’ friend; a positive influence you’ll want emulate more than someone else who doesn’t make their health a priority. If your friend orders a salad, it’s easier to do the same.

10. You can celebrate your successes together! What’s better than accomplishing your goals? Doing it with a friend/spouse/buddy that can celebrate with you!

To Do, Or NOT To Do…

resolutionNew Year’s Eve is just around the corner. The next day is the new year! 2013! What does the new year have in store for you? Have you given it much thought yet? Maybe it’s not a big deal. Maybe it’s just another day, a continuation of the same routine. But, I like to think of it as a new beginning! A new chance to make some little or BIG changes in your life! Whether you intend to or not, you’re making a resolution that day. You’re either going to make a FIRM decision to DO or NOT to do something.

I bet very few people will roll out of bed that day and think to themselves “I’m NOT going to do anything to make my life better this year”. However, the passive act of NOT thinking about it, is your decision, which becomes your resolution. You will have resolved to do nothing.

Instead, start thinking about it NOW. Lay the groundwork to be actively resolved and determined to make 2013 a better year! So that when you roll out of bed on January 1, 2013 you have a plan of action. Maybe that means that you make a list of the problems or things that you need to change, and start thinking about the solutions! For me, it’s time management. I have been actively pursuing solutions to this problem already. I’m formulating plans, trying different methods, looking at all the possible solutions. I am determined to make 2013 a year that I bring it all together. I plan to continue working toward my health and fitness goals, developing as a coach and work at home mom, and organizing my days so that my family experiences the best ME I can be!

So everyone is making a resolution. It’ll be a firm decision either way. So ask yourself this: Am I firmly resolved to do nothing to change my life, or something to make it better? Even if it’s just something small, make a little tweak here and there, but have a plan. Start thinking about it now. Act with determination ‘to DO’! Don’t let your resolution passively default to ‘NOT to do’.

Are You Going to START or Make it Last?!

It’s mid-December, hard to believe right? But you know what that means…January is just around the corner. And you know what that means, right? A new year is approaching! And you know what that means, right? Time to make your resolutions a reality! As we prepare for Christmas and do all of the cooking and baking and eating and running around like crazy chickens without our heads…we should take a minute and think about what we want for 2013. What do you want? Is it going to be the year of YOU?!

January is always such a big time for STARTING! It’s a new beginning, a new chance to get it right. The trick is to MAKE IT LAST! A good start begins with a solid plan. Do you have a plan? Consider this: I have a new challenge group starting up on January 7. This gives you about a week to recover from the holidays, formulate a plan, get organized and then CRUSH IT for 30 days! We’ll focus on health, fitness, eating clean and accountability: this is the key ingredient! We report in daily, and let the group know what we’re doing and how we’re doing. Are we sticking to our workout schedule? Are we eating the food that will help us achieve our goals? We’ll talk about our struggles and our achievements! You’ll take your before measurements, set realistic goals, and check your progress weekly. You will be amazed at what you can accomplish in 30 days if you stick with it! After that, you’ll have the momentum and motivation you’ll need to carry on and MAKE IT LAST!

Fall Off Horse, Get Back Up, Repeat?

If you’ve never ridden a horse before, it’ll take some time to learn how, right?  If it’s been awhile, you’re going to need some practice.  If it’s something you want to do…you’ll keep trying until you are securely in the saddle and riding into the sunset, or wherever you want to ride…it’s just that the sunset seems like a place that people on horses want to go.  Just saying.

You’ve heard all of the sayings…”Fall down 7 times, get up 8″, “If you fell down yesterday, stand up today”, “I get knocked down but I get up again…” (ok, maybe not a saying, but a catchy tune).  I guess you can hear these words and say these things until you’re blue in the face, but until you’ve lived it and embraced it might not seem real.  I can say these words to someone everyday, loudly even, and that person may hear what I’m saying, but not believe me.  What advice would you give to someone who thinks they’ve failed, and finds it easier to stay down rather than get up and try again?

We’re all going to fall down sometimes right?  But if you’ve clearly defined goals in your mind that you really want to achieve…you MUST get back up.  Don’t forget what’s important to you, and don’t let a misstep or a step backwards distract you from what you want.  Keep it in sight, remind yourself of it everyday.  Let every choice you make start with a question: “Is this going to help me reach my goals?”  I want to shout from the mountain top, or at least a really high hill, that YOU CAN DO IT!!!  Of course you can! It’ll take time, committment and a whole lot of hard work, but if it’s your goal, than do it.  Take the time, make the commitments and do the work. We may or may not be discussing horses at this point, but you get where I’m going here. I can believe in you, your friends can believe in you, but you’re the one who needs to get in the saddle and ride.  So…do you believe in you?  If so, than grab my hand, get up and try again.

Challenge Days 8 & 9

Nothing fancy going on here.  I did find some tasty organic pomegranate oatmeal at Costco that I like…so that’s good.  I had my leftover frittata for lunch. That tasty looking snack is some plain Greek yogurt, sweetened with a little Stevia and blueberries and crunched up almonds on top.  A big salad, some Shakeology and a ChaLEAN Extreme workout rounded out the day.  I was pretty low on calories, but I ran out of time in the day, and wasn’t particularly hungry…so what are you gonna do?

Man, I need to do some more cooking.  Yesterday I was a little desperate at dinner time and seriously just grabbed stuff out of the frig and threw it together and called it dinner.  I had a leftover chicken breast that I chopped up and put on 2 whole wheat tortillas that I spread with avocado.  I put a little reduced fat cheese and homemade salsa on top and that was that.  Not pretty, but filling and fast.  I made another bowl of yummy oatmeal for breakfast.  We went hiking so I grabbed a bag of almonds for the trail.  I enjoyed another big salad for lunch and worked out like a ninja in my black clothes. No mask though…too sweaty.
