Instant Pot Beef & Broccoli – Ultimate Portion Fix Approved

NEWSFLASH!!! BUSY MOM COOKS DINNER AND NOBODY CRIES!

One of the things I love about doing a new program is that it forces me to really focus on nutrition and come up with meals that will not only fit in to MY nutrition plan, but also make sure it’s something my family will enjoy!

This one does both! I mean, teenagers licking the bowl is a good sign right?

Which is good, because nobody likes crying kids for dinner.

Ingredients

  • 2 tsp olive oil
  • 1 1/2 pounds of flat iron/flank/skirt steak, sliced very thin against the grain
  • 1/2 cup diced onions
  • 2 cloves of garlic, minced
  • 1 tsp freshly grated ginger (1/2 t. dry will work too)
  • 2/3 cup beef stock (or sub water)
  • 1/3 cup of liquid aminos (or sub low sodium soy sauce)
  • 2 T plus 1 tsp honey
  • 3-4 cups of broccoli florets
  • 1 T cornstarch (or favorite thickener)
  • salt & pepper to taste

*optional: crushed red pepper to taste, scallions, nuts for garnish

Directions:

  1. Whisk liquid aminos, stock, honey and ginger together. Set aside.
  2. Set Instant Pot to Saute. Once hot, add olive oil and onions and sauté until they begin to soften and become fragrant. Add in garlic and cook an additional minute.
  3. Pour stock mixture into the IP and add in sliced steak. Cover and lock your Instant Pot and set to manual/pressure cook for 12 minutes. When cook time is up, allow to naturally release for 5 minutes before finishing with a quick release.
  4. While the beef cooks, you can lightly steam the broccoli, or you can add in at the end until it’s cooked as much as you like it. *I found it easier to steam on the stove for 3-5 minutes.
  5. Carefully take off the lid and remove 1/2 cup of the cooking liquid and make a slurry by whisking in 1 T cornstarch. Mix until well combined and then return to pot. Set IP to sauté and stir until the sauce begins to thicken. Repeat slurry process if necessary. Stir in salt. Turn pot to keep warm.
  6. Add in chopped broccoli florets and stir everything together. *Allow cooking time if you didn’t steam ahead.
  7. If desired, add some crushed red pepper and/or garnish with some scallions or peanuts (count as a blue container).
  8. Serve over rice, quinoa, or cauliflower rice.

*I have seen so much success personally and in my groups with this program. The timed nutrition plan is honestly a game-changer for me and for all of the women I’m helping through the program. Egg Roll Bowl! (FIX approved!)

Oh my goodness! This is heaven in a bowl! I might have this as my post-workout meal every single day for the duration of my new fitness program! I made a huge pan of it that I will enjoy the rest of the week!

I love that this meal plan tells me exactly what to eat and when to eat it! It really takes the guesswork out of the entire process! And although it’s probably one of the most disciplined programs I’ve ever done, somehow it’s been easier for me to stick with it than any other program I’ve tried.

FIX-approved Egg Roll Bowl

(makes 4 servings – perfect for meal prepping!)

INGREDIENTS

  • 1 lb lean ground turkey or beef
  • 16 oz. cole slaw mix (or about 1/2 cabbage and 3 carrots – shredded)
  • 4 tsp sesame oil
  • 3 cloves garlic
  • 1/2 t. ginger (Fresh would be great! Dry is fine too.)
  • 1/4 cup broth (chicken/veggie whatever)
  • 3 T liquid aminos (or reduced sodium soy sauce)
  • 1/2 t hot sauce
  • 1 t. vinegar (apple cider or white work fine)
  • 4-5 drops of stevia extract (optional)
  • salt & pepper to taste
  •  cooked brown rice (1 yellow container per serving)
DIRECTIONS
  • Brown meat in skillet, season with salt and pepper.
  • Meanwhile combine soy sauce, hot sauce, vinegar, ginger and stevia.
  • Once the meat is cooked thoroughly, remove from pan, drain and set aside.
  • Add oil to pan and sauté carrot and cabbage. Add garlic.
  • Add the broth.
  • Cook until cabbage is as tender as you like.
  • Add sauce mixture and meat.
  • Mix to combine and serve over 1 yellow container of pre-cooked brown rice.

Containers used per serving: 1 red, 1 green, 1 yellow, 1 tsp.

Kid-Approved Fish Tacos

We have been observing Taco Tuesday for many years at my house. But that certainly doesn’t mean we’re dumping a packet of taco seasoning into a pan of ground beef and ripping open a box of Ortega taco shells. We like to get creative and try all sorts of different taco fillings and methods. And we don’t limit ourselves to tacos! Sometimes we’ll have enchiladas, taco salad or any other Mexican-inspired dishes that catch my attention on Pinterest. 😉

But these fish tacos are a definite keeper. Three out of four kids and husband agree – and that’s a successful meal in my book!

And they are a healthy meal that fits in my nutrition plan!

Try these on your clan and let me know what you think!

INGREDIENTS:

Lime Crema

  • 1/3 cup sour cream or plain Greek yogurt
  • 3 tablespoons mayonnaise (I used avocado mayo)
  • zest from half a lime
  • juice of whole lime
  • 1/4 teaspoon salt

Slaw:

  • 2 cups cabbage, shredded
  • 1/4 cup cilantro, chopped
  • 2 carrots, shredded
  • 1 clove garlic, minced

Tacos:

  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1/4 teaspoon red pepper powder (more or less to taste)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound white fish (eg. cod, snapper, talipia)
  • corn tortillas
  • 1 avocado, sliced (optional)

DIRECTIONS:

  1. Combine ingredients for the lime crema in a small bowl and set aside.
  2. Combine ingredients for the slaw in a large bowl and set aside.
  3. Preheat oven to 425°F. 
  4. In a small bowl combine the oil, lime juice, cumin, paprika, coriander, red pepper powder, garlic powder, sale and pepper.
  5. Pour the marinade mixture over the fish and toss to coat.
  6. Place the fish on a lined baking sheet and let it marinade in the refrigerator for about 15 minutes.
  7. Bake fish for 10-15 minutes (depending on thickness of the fish) until it is flaky when tested with a fork.
  8. Transfer the fish to a plate and break in to smaller pieces with a fork.
  9. Heat the tortillas according to package directions.
  10. Add fish, slaw and crema to the warmed tortillas and enjoy!

Container equivalents per 2 tacos: 1 red, 1 green, 1 yellow, 1 blue (avocado)

Healthier Instant Pot Zuppa Toscana

I LOVE a warm bowl of soup…especially when it’s freezing ass cold outside! My phone informs me that it feels like -3° at the moment. I might need to take a BATH in this soup!

This Zuppa Toscana REALLY hit the spot. Only trouble is…I made it and didn’t have time to eat it right away. I thought I had planned it out to a T! I knew exactly how much time it would take to make in my Instant Pot – which isn’t long by the way! I freaking LOVE this thing! I just hadn’t allowed time to defrost the meat! DANGIT!

So the second it finished cooking, I had to run out the door to take my daughter to dance. I quickly blended up a chocolate peanut butter Shakeology for the road, but knew that the steamy warm goodness would be there waiting for me when we returned. I didn’t even take off my coat. I filled up a bowl and slurped it down! SOOOooo good! And with an Instant Pot…SOooooo fast! (Just make sure you have thawed your meat first!) 😉

Ingredients

    • 2 Tbs olive oil
    • 1 medium onion, diced
    • 1 lb ground mild Italian turkey sausage (or use this recipe if you only have the ground turkey)
    • 3-4 cloves garlic, minced
    • 3 large baking potatoes, unpeeled, halved long-wise and sliced into 1/4-inch slices.
    • 3 carrots sliced
    • 6 cups chicken broth
    • 2-3 cups fresh baby kale
    • 3/4 cup milk (unsweetened nut milks, 2% or half and half if you like to live dangerously!) 🙂
    • salt & pepper to taste

Instructions

    1. Using the “saute” function of the Instant Pot, heat the olive oil. Add onions and cook until they begin to become translucent.
    2. Add meat, crumbling up into smaller pieces and cooking until browned.
    3. Add garlic and cook about a minute – until it starts to smell all nice and garlicky!
    4. Drain off excess grease if desired and return to pot.
    5. Add potato, carrot slices and chicken broth.
    6. Lock the lid into place and set to “sealed.”
    7. Cook at high pressure for 5 minutes on the Manual setting.
    8. When cooking finishes, allow a natural pressure release for 10 minutes, followed by a quick release.
    9. When pressure valve has dropped, remove the lid and add kale to the pot. The heat from the soup will wilt the kale as you stir.
    10. Pour in the milk or half and half and desired amount of salt and pepper and stir to combine.
Makes about 6 servings.

Crack Slaw

There’s a reason this is called ‘crack slaw’.

It’s easy to stay on track when you find delicious food you could eat again and again. We fight over leftovers with food like this. 🙂 It’s got a great flavor without pasta or rice to fill you up and make you feel bloated.
This is so quick and easy to make, too! Great for meal prepping for a week of healthy lunches/dinners. If you’re following a container nutrition plan (like 21 Day Fix) this is great! No yellows!  Those precious yellows can be hard to avoid…you won’t even miss the carbs. It’s also paleo-friendly!

Ingredients 
1 pound lean ground turkey (or beef)
1 T. sesame oil (any oil would work)
2-3 cloves garlic – minced
3 green onions – chopped
1/2 large head green cabbage – chopped
1 carrot – shredded
1/4 cup broth (chicken/veggie whatever)
3 T low sodium soy sauce or liquid aminos

Spring! 7 Day Salad Challenge

I’ve been testing out some new and revisiting some of my old favorite salad recipes lately. It’s hard work, but somebody has got to do it! Every day I chop, mix, marinate, whisk and eat my way through the results.

Mmmm Monday – Blueberry Pancake Muffins

Well these were super easy peasy to make and quite delicious! Is it wrong that I want to hide them from my kids?

It never fails, when I make a healthy ‘treat’ for myself on the weekends, that I could enjoy for the entire week, the kids have them gobbled up before the week even starts. And they found these right away because the house smelled amazing! They were like vultures, trying to pop steaming hot muffins from the pan fresh out of the oven! Maybe not the ‘smartest’ vultures! 😉

I am starting the 21 Day Fix Extreme again this week, and these are approved for the meal plan! 🙂 I like them because they are not sickeningly sweet – but just enough to satisfy a little sweet tooth without making you feel like you need MORE!

So here is how I made them:

Blueberry Pancake Muffins

*I made 24 MINI muffins! If making larger muffins, you’ll need to adjust the baking time.

  • 1 1/2 cups almond flour (I get mine at Costco – but you can also find Bob’s Red Mill and other brands)
  • 1/4 cup plain Greek yogurt (I like Fage)
  • 2 T. coconut oil
  • 2 T. honey, maple syrup or sweetener of choice (I used coconut sugar for this one)
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1/4 tsp. sea salt
  • 2 eggs + 2 whites
  • 1 cup fresh or frozen blueberries (or ANY berries!)

 

Directions:

  1. Preheat oven to 350 degrees and spray your muffin tin with cooking spray.blue_pan (7)
  2. Place all of the ingredients except the berries into a blender or food processor and pulse until smooth – it will be thickish.
  3. Fill the muffin cups 1/2 – 2/3 full and spoon the berries on top. Poke them in a bit and they will sink as they bake.
  4. Bake for 10-15 minutes, until the tops are lightly browned and spring back when you press them.
  5. ENJOY! (and/or HIDE from you kids!)

 

Nutritional Info:
Serving size = 4 mini muffins!

Containers: 1/2 yellow, 1 blue, 1/4 red, 1/4 purple, 1 tsp
