Grilled Veggie Tacos

These tacos were inspired by a Saturday morning trip to the Brighton, Michigan Farmer’s Market. We stopped at the Stone Coop stand to buy some fresh, local organic (and non-gmo) veggies! I came home with a couple HUGE bags full of goodness! Check it out!

I have been scouring the googles, Pinterests and internets these days for some tasty vegan recipes…since my husband recently decided to do a trial run eating a vegan/plant-based diet. Of course that decision means that I have also been eating mostly vegan foods…since of course I am the one who does the meal planning, shopping, prepping and cooking! I’m always up for a challenge though…so it’s all good! ūüôā

I have always said that I think I could easily be a vegetarian. I don’t often crave meat and could literally LIVE on fruits and veggies. My only sticky spot is eggs and cheese! I really love both, and giving them up would be a struggle. I’ve done without both for a week though…and haven’t perished. Yet!

It is difficult, however, given that we have 4 kids who have NOT decided to become vegan – or vegetarian even – at this particular time. I am not one to make that decision for anyone, including my kids. So¬†that means I’ve been¬†preparing different meals for them. And that, my friends, is not something I think I could do for the long run! I can see exposing them to more and more meatless meals and plant-based options, but unless they say, “Mom, I want to be a vegan”, I will have to get creative!

Another conundrum is that I just don’t like to ‘call’ myself anything in particular. I don’t like to draw a line in the sand and say, “never again will I ____”. You know?! So for the moment, we are eating ‘mostly vegan’ food, and doing lots of reading, research and soul-searching to see if it’s something we could see ourselves sticking with, at least for the foreseeable future.

Ok…so back to the recipe. You don’t have to be a vegan, vegetarian or Michigander to enjoy these! Especially this time of year when the veggies are fresh! It was a taste sensation and my husband declared this recipe to be a KEEPER! There was a ton of the veggie filling leftover that we made more tacos with the next day and added to brown rice bowls.

GRILLED VEGGIE TACOS

INGREDIENTS:

2 Tbsp. coconut oil
1 medium onion (red, sweet, whatever!) – diced
2-3 garlic cloves (minced
2 bell peppers – chopped
1 jalape√Īo, minced or chopped (the more seeds you keep, the spicier these will be)
1 can of black beans, drained and rinsed
1 cup fresh mushrooms, chopped
1 tsp. ground cumin
1 tsp. paprika
1 tsp. dried oregano
3 cups fresh spinach, chopped
sea salt and black pepper to taste
6 or 8 tortillas (sprouted, whole grain, whatever you like)

*You could really get creative here and add lots of different veggies like sweet potatoes, squash, carrot, etc.

 

 

EXTRAS:

vegan cheese
sliced avocado
fresh cilantro
lime juice
salsa (whatever you like)

DIRECTIONS:

  1. In a large, deep skillet over medium or medium-low heat, add coconut oil, onion, garlic and peppers (including jalape√Īo) with a little¬†sea salt. Saut√© for 15 minutes until softened and translucent. You don‚Äôt want them to brown, so reduce the heat if necessary. Cook it slowly so everything gets soft and sweet.
  2. Add black beans, mushrooms and spices. Mix everything together and continue cooking for 5 minutes.
  3. Add spinach and continue cooking for a few minutes, until spinach wilts. Add salt and pepper to taste and remove from heat.
  4. In a large pan or skillet, sprayed with cooking spray, assemble the tacos. Put enough of the veggie filling in the tortilla that you can flip to brown both sides. Place avocado slices on top of the filling along with some chopped fresh cilantro and a squirt of fresh squeezed lime juice. *Feel free to throw some vegan cheese in there as well, but with the avocado, I didn’t think it really needed it!

That’s it! Enjoy all of the veggie goodness!

Lemon Berry Green Iced Tea

So my daughter is always trying to get me to take her to Starbucks for frappu-Ch-Ching-os (SO expensive! JEEZ!). I wasn’t in the mood for coffee, or for the price tag, so I tried one of the green tea chiller drinks (or whatever they’re called) instead. It was surprisingly delightful, albeit still a little pricey! So I was on a mission to create my own for a small fraction of the price!

I started looking up recipes, but they all called for making a berry syrup, with a ton of sugar. Blech! NOT what I wanted! So as per usual, I just took some ideas from a few different recipes and kinda did my own thang. The result was pure yumminess! This will be such a tasty summer beverage, and I can’t wait to experiment with some other flavors! The possibilities are endless!

For my first experiment I made this delicious…

Lemon Berry Green Iced Tea!

Ingredientsbigelow

  • 8¬†cups water
  • 1¬†cup raspberries
  • 1¬†cup strawberries, chopped
  • 8¬†bags lemon green tea (I used Bigelow green tea w/lemon)¬†
  • 4¬†teaspoons honey, agave nectar (or sweetener of your choice)
  • lemon, berries to garnish ūüôā

Directions

  1. In a large pot, bring water to boil and then remove from heat.
  2. Add berries, crush a little with a potato masher. Add tea bags and honey (agave or sweetener of choice), stir well and let sit for about 15 minutes.
  3. Pour through a strainer into a 2 quart pitcher. Cool to room temperature before transferring to the refrigerator.
  4. Serve in a tall glass over ice with a lemon berries or BOTH. Enjoy!

 

I am quite certain that this could be prepared as sun tea. I haven’t tried that yet, but it’s on my list of things to do this summer!

What’s on sale this month?

Buffalo Chicken Salad


So I was walking through my kitchen the other day trying to think of something to eat for lunch. I had leftover rotisserie chicken in my frig. So that’s where I started. I walked by my counter and saw the hot sauce. Then I opened the frig and saw my Greek yogurt and POOF! It hit me!¬†BUFFALO CHICKEN SALAD!

And since I’m following the portion container meal¬†plan from 21 Day Fix, Hammer & Chisel, Cize etc… this worked¬†perfectly! The end result was creamy, a little crunchy and just a wee bit spicy! Why have I never thought of this before?! I think this one will go into the rotation because it really hit the spot!

So here is what you do (p.s. …it couldn’t be easier!)

Ingredients

  • 4 oz shredded chicken breast
  • 1/4 cup plain Greek yogurt
  • 1 T. favorite hot sauce (Franks is a good one for Buffalo)
  • 1 stalk of celery – diced
  • dash garlic powder
  • salt and pepper

Directions

Mix it all together and serve in a whole grain tortilla/wrap, put it on a salad, or eat it out of a bowl! Whatever floats your boat! ūüôā

This recipe is one serving and will count as 1 red, 1 green and 1 yellow (w/ romaine and a wrap)

Ode to My Mom, the Queen of Earth Day!

My mom with her recycling ‘box’ (they don’t have bins to use). And her beautiful, steaming compost pile!

I always say my mom was earth conscious before it was cool. She has recycled, conserved and reused before these were even buzzwords that all of the cool people talk about now. Maybe it’s because she grew up on a farm, or maybe it’s because she was a bit of a hippie in the 60s. I just thought she was frugal and crafty, and sometimes…a little crazy.

She might have been the very first recycler in the town where I grew up. She recycled before there was even a recycling program. She would collect cans, plastic bottles, glass bottles, stryofoam and paper, and save them in our house. About once a month she would load up the back of the car and drive 20 to 30 miles away where there was a recycling plant. She would even collect other people’s cans and bottles and things, because it bothered her that they would get thrown into the garbage otherwise. There is some¬†sort¬†of a recycle program there now, but it’s not curbside, it’s not convenient, yet she does it anyway. She gets irritated that they won’t take all of the different numbers, so I think she still makes that monthly trip for the things they won’t accept in town.

She’s had a garden for as long as I can remember. She grew up on a farm so I think she has always appreciated being able to grow some of her own food. Her thumb is way greener than mine! If she gets critters in her garden, she finds a natural way to get rid of them or deal with them. She is currently at war with bunny rabbits! And a couple of years ago her garden had a nasty case of slugs. It keeps her busy. ūüôā

At the end of her garden you will find a giant steaming pile of rubbish. I swear, this woman just hates to throw things away! My parents are master composters! I always thought it was weird that we took our food scraps out to the garden, but her garden is always beautiful. And those bits of apple peels, lettuce scraps and eggshells had something to do with that! Now I get it!

If she can’t recycle it, or compost it, she will figure out a way to reuse it. For example – and she will hate that I am telling this story again – but it has to be told. All through grade school she never once bought a bag of brown paper lunch bags. I had to use leftover bags from the grocery store, or the hardware store, or wherever else you might have gotten a bag. Sometimes they were medium-sized and other times they were the big, full-sized grocery bags. And if I didn’t bring them home to reuse for the rest of the week, she would get upset with me, and have to go find another bag in her collection.¬†By the end of the week my lunch bag was looking pretty shabby. When I discovered that you could buy a big bag of normal-sized, brown paper lunch bags for like a dollar, I was miffed! Here I thought they must be very expensive because why else wouldn’t I get a new bag every day like everyone else at school. But now I get it, she was ahead of her time.

At the time I didn’t appreciate it, but my mom was very thoughtful. Not only was she thoughtful about the environment, she always made sure I was taken care of and well-fed. I never had prepackaged chips or HoHo cupcakes in my lunches, but I did have homemade snacks and healthy treats that she made and packaged herself. I want to be like her when I grow up!

I guess I just got used to some of the rather odd things that she did. When I was dating my future husband in high school, he finally asked me¬†one day why my mom kept old empty bread bags in the freezer. I guess I never thought about it. She had just always done that. She would use empty bread bags instead of Ziploc bags. And her mom had taught her to keep them in the freezer so that any little bread particles didn’t get moldy and gross. Smart!

And this might be the funniest story of all. She believed she had found a use for dryer lint. She started saving different colors, and was going to make some sort of picture or collage out of it. Luckily, we talked her out of that project. Because… YUCK! She had taken it too far this time.

There should be some sort of award for people like her. She just did these things because it was the right thing to do. Why would you throw something away that could be reused or somehow turned into more of the same thing, or something entirely different? It wasn’t always convenient but she did it anyway. Call it frugal, call it environmentally conscious, call it whatever you want. But my mom is the queen of Earth Day and I’m going to make her a crown out of an empty oatmeal container!

Spring! 7 Day Salad Challenge

It’s Spring! Now if the weather would just get with the program!

I’ve been testing out some new and revisiting some of my old favorite salad recipes lately. It’s hard work, but somebody has got to do it! Every day I chop, mix, marinate, whisk and eat my way through the results.
