Lemon Berry Green Iced Tea

So my daughter is always trying to get me to take her to Starbucks for frappu-Ch-Ching-os (SO expensive! JEEZ!). I wasn’t in the mood for coffee, or for the price tag, so I tried one of the green tea chiller drinks (or whatever they’re called) instead. It was surprisingly delightful, albeit still a little pricey! So I was on a mission to create my own for a small fraction of the price!

I started looking up recipes, but they all called for making a berry syrup, with a ton of sugar. Blech! NOT what I wanted! So as per usual, I just took some ideas from a few different recipes and kinda did my own thang. The result was pure yumminess! This will be such a tasty summer beverage, and I can’t wait to experiment with some other flavors! The possibilities are endless!

For my first experiment I made this delicious…

Lemon Berry Green Iced Tea!

Ingredientsbigelow

  • cups water
  • cup raspberries
  • cup strawberries, chopped
  • bags lemon green tea (I used Bigelow green tea w/lemon) 
  • teaspoons honey, agave nectar (or sweetener of your choice)
  • lemon, berries to garnish 🙂

Directions

  1. In a large pot, bring water to boil and then remove from heat.
  2. Add berries, crush a little with a potato masher. Add tea bags and honey (agave or sweetener of choice), stir well and let sit for about 15 minutes.
  3. Pour through a strainer into a 2 quart pitcher. Cool to room temperature before transferring to the refrigerator.
  4. Serve in a tall glass over ice with a lemon berries or BOTH. Enjoy!

 

I am quite certain that this could be prepared as sun tea. I haven’t tried that yet, but it’s on my list of things to do this summer!

Buffalo Chicken Salad


So I was walking through my kitchen the other day trying to think of something to eat for lunch. I had leftover rotisserie chicken in my frig. So that’s where I started. I walked by my counter and saw the hot sauce. Then I opened the frig and saw my Greek yogurt and POOF! It hit me! BUFFALO CHICKEN SALAD!

And since I’m following the portion container meal plan from 21 Day Fix, Hammer & Chisel, Cize etc… this worked perfectly! The end result was creamy, a little crunchy and just a wee bit spicy! Why have I never thought of this before?! I think this one will go into the rotation because it really hit the spot!

So here is what you do (p.s. …it couldn’t be easier!)

Ingredients

  • 4 oz shredded chicken breast
  • 1/4 cup plain Greek yogurt
  • 1 T. favorite hot sauce (Franks is a good one for Buffalo)
  • 1 stalk of celery – diced
  • dash garlic powder
  • salt and pepper

Directions

Mix it all together and serve in a whole grain tortilla/wrap, put it on a salad, or eat it out of a bowl! Whatever floats your boat! 🙂

This recipe is one serving and will count as 1 red, 1 green and 1 yellow (w/ romaine and a wrap)
